How to Cook Carrot and Mushrooms Bulgur

Ingredients needed to make Carrot and Mushrooms Bulgur:

  • 1 cup cremini mushrooms, finely chopped
  • ¼ cup carrots, peeled and finely chopped
  • 1 cup medium-grind bulgur
  • 2 cups water
  • ¼ cup dry white wine
  • 2 tbsp dry white wine
  • 1 tbsp olive oil
  • ¾ tsp kosher salt

Cooking instructions for Carrot and Mushrooms Bulgur:

  • Add a lashing of oil in a saucepan and heat it over moderately high heat until it shimmers.
  • Throw in the shallots and sauté for a couple of minutes or until they soften.
  • Stir in the mushrooms, along with a dash of seasonings and sauté further for another 4-5 minutes, stirring often, until the mixture dries up.
  • Add a bout of wine and cook over high heat for about 3 minutes or until most of the alcohol evaporates.
  • Empty a couple of cups water into the mixture and bring it to a boil.
  • Stir in the bulgur, along with salt, if necessary and place a lid on top.
  • Reduce it to a simmer and cook, covered, over slow flame for about 10 minutes or until the bulgur is properly cooked.
  • Toss the carrots into it, give it a nice stir and continue to simmer for another 5 minutes or until it softens.
  • Remove from heat and let it rest for about 5 minutes with the lid on.
  • Give it a final stir with a fork and serve warm.
