How to Cook Carrot and Mushrooms Bulgur

Ingredients needed to make Carrot and Mushrooms Bulgur:
- 1 cup cremini mushrooms, finely chopped
- ¼ cup carrots, peeled and finely chopped
- 1 cup medium-grind bulgur
- 2 cups water
- ¼ cup dry white wine
- 2 tbsp dry white wine
- 1 tbsp olive oil
- ¾ tsp kosher salt
Cooking instructions for Carrot and Mushrooms Bulgur:
- Add a lashing of oil in a saucepan and heat it over moderately high heat until it shimmers.
- Throw in the shallots and sauté for a couple of minutes or until they soften.
- Stir in the mushrooms, along with a dash of seasonings and sauté further for another 4-5 minutes, stirring often, until the mixture dries up.
- Add a bout of wine and cook over high heat for about 3 minutes or until most of the alcohol evaporates.
- Empty a couple of cups water into the mixture and bring it to a boil.
- Stir in the bulgur, along with salt, if necessary and place a lid on top.
- Reduce it to a simmer and cook, covered, over slow flame for about 10 minutes or until the bulgur is properly cooked.
- Toss the carrots into it, give it a nice stir and continue to simmer for another 5 minutes or until it softens.
- Remove from heat and let it rest for about 5 minutes with the lid on.
- Give it a final stir with a fork and serve warm.
