How to Cook Paneer-Stuffed Peppers

Ingredients needed to make Paneer-Stuffed Peppers:
- 9 oz paneer or whole milk ricotta
- 4 large red bell peppers, stemmed, deseeded and halved
- 3 large tomatoes, chopped
- 1 onion, chopped
- 2 ½ oz green beans, chopped
- 2 tsp fresh ginger, finely chopped
- One handful fresh cilantro, chopped
- 2 handfuls frozen peas
- 5 tbsp double cream
- 1 ¼ tsp cumin seeds
- ½ tsp ground turmeric
- 1 ½ tsp garam masala
- 2 tsp ground coriander
- ½ tsp red chili powder
- Salt to taste
- 4 tbsp vegetable oil
- 3 ½ fl oz water
Cooking instructions for Paneer-Stuffed Peppers:
- Warm up your oven to 375 degrees F.
- Lay out the halved peppers onto a baking pan and smother it with a tbsp oil oil.
- Roast them in the oven for 25 minutes or until they turn soft; set aside once cooked to desired doneness.
- Drizzle rest of the oil in a saucepan and heat until it shimmers.
- Throw in the cumin seeds and stir fry for half a minute or until they give out a pleasant, spicy aroma.
- Stir in the chopped onion and sauté for 3-4 minutes, while stirring from time to time, until it caramelizes.
- Scatter the tomatoes, beans, peas and ginger into it and sprinkle a dash of salt as well as ground spices over them.
- Stir them all together until mixed well and cook for 10 minutes or until the tomatoes are softened enough to appear mushy.
- Crumble the paneer or ricotta into the mixture and give them a nice stir to mix well.
- Cook the mixture until it starts simmering and continue to do so for a couple of minutes.
- Whisk in the double cream and continue to simmer until warmed through.
- Sprinkle the chopped cilantro on top and simmer the sauce for 5 minutes, while splashing water into it at times to prevent it from drying out.
- Cook until most of the liquid is absorbed.
- Warm up the grill to maximum heat.
- Meanwhile, spoon small portion of the cooked paneer into the roasted pepper halves and grill them until the stuffing turn golden.
- Arrange them onto serving plates and serve warm.
