How to Cook Lamb Shish Kebabs

Ingredients needed to make Lamb Shish Kebabs:

For the spiced lamb:

  • 1 lb 5 oz lamb leg meat, diced
  • 2 garlic cloves, peeled and finely chopped
  • Pinch of salt
  • ¾ tsp ground cumin

For the yogurt sauce:

  • 5 oz greek-style yogurt
  • 2 garlic cloves, peeled and finely chopped
  • 1 tbsp tahini or sesame paste
  • 2 tsp extra virgin olive oil
  • Handful of fresh mint, chopped
  • Pinch of salt

To serve:

  • 8’’ ready-made flat breads
  • 4 dill pickles, thickly sliced
  • 7 oz white cabbage, cored and shredded
  • ½ red onion, peeled and thinly sliced
  • 2 ripe tomatoes, sliced
  • Pickled chillies
  • Store-bought chili sauce, as required
  • 2 tbsp fresh lemon juice

Cooking instructions for Lamb Shish Kebabs:

  • For the spiced lamb, toss the ground cumin and garlic together until mixed thoroughly and throw in the diced lamb meat into it.
  • Stir them all together until coated well with the spice mixture and set aside in the fridge, covered, overnight.
  • Place a griddle over high heat and wait until it turns smoking hot.
  • Working in batches, toss the marinated lamb into the hot griddle and sprinkle a dash of salt to season.
  • Sear each side of the meat for about 3-4 minutes or until they turn golden brown with the griddle marks imprinted on their either sides.
  • Turn off the heat and keep warm.
  • For the yogurt sauce, whisk all its ingredients until they blend together thoroughly to form a smooth mixture; set aside.
  • For the flatbreads, toast each side of the flatbreads on another hot skillet for a couple of minutes over slow heat or until they are heated through.
  • Spread a large spoonful of yogurt sauce across the middle of each flat bread and top it up with some shredded cabbage.
  • Add a lashing of chili sauce over it and arrange a couple of tomato slices over it, followed by two more slices of onion.
  • Add some dill pickle slices on top and finally top it up with the lamb cubes.
  • Finish it off with a sprinkling of pickled chilies and a splash of lemon juice over the meat and wrap one edge of the flatbread over the filling to form a semi-circle.
  • Make rest of the wraps in a similar fashion and serve right away.
