Below is a recipe card. Since the norm is to serve with a crouton, truffle sauce, and often with potatoes, the recipe includes those.

However, pictured is a simpler version of the dish served over a white asparagus.  To simplify it you can leave out the crouton and potatoes and serve as pictured. To simplify even more or if you lack truffle, you can omit he Madeira truffle sauce and serve with a simpler sauce of choice. See the recipe card notes.

Tournedos Rossini is a classic French dish combining beef tenderloin, foie gras, and a truffle sauce. It is often also served on a crouton with potatoes. This recipe provides both a classic preparation and a simplified version.

Ingredients

  • 6 foie gras slices, each 2’’ wide and ¼’’ thick
  • 6 beef fillets, 6-8 oz each
  • 18 tourneed potatoes
  • 24 black truffle slices
  • 6 white bread rounds, sautéed in butter
  • 1 tbsp fresh parsley, finely chopped
  • ½ cup Madeira
  • 10 tbsp butter
  • Salt and freshly ground black pepper
  • 1 tsp arrowroot
  • 1 ½ cups veal stock

Instructions

  • Warm oven to 400 degrees F.
  • Rub a dash of salt as well as ground black pepper all over the foie gras and arrange them into a shallow dish.
  • Bathe the foie gras with ¼ cup Madeira and set aside.
  • Pour rest of the Madeira into a separate bowl and scatter the black truffle slices into it.
  • Set both of them aside to soak for 10 minutes and drain them out into a separate plate.
  • Spoon 8 tbsp butter into a large, oven-proof skillet and heat over moderate heat until it melts.
  • Throw in the potatoes along with a dash each of seasonings, and sauté them for 3-4 minutes, while stirring them from time to time.
  • Pop the skillet into the oven and roast the potatoes for 20 minutes, or until they turn golden brown.
  • Rub more salt as well as ground black pepper all over the beef fillets to season and set aside.
  • Melt rest of the butter into a clean skillet and place the fillets into it.
  • Cook each side for 3-4 minutes on high heat, flipping them over halfway through the cooking, until both sides get seared evenly.
  • Drain them out into a plate and lay out the sautéed bread rounds into the skillet.
  • Top each with a fillet and roast them in the oven for 6-8 minutes or until the meat is cooked to medium-rare doneness.
  • Place the marinated foie gras onto a hot pan and sear each side for a couple of minutes.
  • Drain onto piled-up absorbent papers and set the slurry aside.
  • Spoon 2 tbsp of the Madeira, used for soaking, into small bowl and stir in the arrowroot until it dissolves completely.
  • Pour the veal stock into a saucepan with foie gras fat, along with the soaking Madeira as well as truffles and bring the mixture to a boil.
  • Beat in the slurry until well combined and continue to boil the mixture for another 2 minutes.
  • Bring it down to a simmer and cook for 3-4 minutes.
  • Stir in a dash each of seasonings and continue to cook until the sauce thickens considerably.
  • Divide the fillets among serving plates and place 3 potatoes around each of them.
  • Place a foie gras slice on top of each fillet and drizzle the sauce over them.
  • Sprinkle the chopped parsley to garnish and serve warm.

Notes

To serve more simply, omit the potatoes and bread. Layer the foie gras on top of the beef. Or, as pictured, add a layer of green or white asparagus.

You can save a few truffles as garnish.

If lacking truffles or you wish to simplify the dish more, omit the Madiera truffle suce and use an alternate, simpler sauce
