How to Cook Beef Fajitas

Makes: 6 fajitas

Ingredients needed to make Beef Fajitas:

For the steak:

  • 1 sirloin steak, cut into thin strips
  • ½ yellow bell pepper, seeded and sliced into strips
  • ½ red bell pepper, seeded and sliced into strips
  • 5 fl oz tequila
  • 1 tsp vegetable oil

For the tomato salsa:

  • 2 tomatoes, diced
  • ¼ red onion, diced
  • ½ green bell pepper, diced
  • 1 tsp pickled jalapeno peppers, chopped
  • Pinch of salt
  • Pinch of caster sugar
  • 1 tbsp olive oil

For the refried beans:

  • 14 oz pinto beans, drained and rinsed
  • 1 garlic clove, finely chopped
  • ½ red onion, finely chopped
  • ¼ tsp ground cumin

To serve:

  • 1 cup guacamole
  • 6 flour tortillas,warmed
  • 5 oz mature cheddar, grated
  • 7 fl oz sour cream
  • Handful of fresh cilantro, chopped

Cooking instructions for Beef Fajitas:

  • To make the tomato salsa, drizzle oil in a saucepan to heat it over moderate flame and dump the tomatoes in it.
  • Stir in the onions as well as bell peppers immediately and saute for about 5 minutes, stirring frequently, until they soften.
  • Sprinkle the oregano, sugar and salt over the mixture and stir them well together to mix properly.
  • Continue to stir fry for about 5 more minutes and turn off the heat.
  • Stir in the chopped pickled jalapenos and set aside until it cools down.
  • To make the refried beans, add the beans to a clean saucepan and pour in water so that the beans remain immersed in it.
  • Add the garlic and onions, along with a dash of ground cumin and sprinkle the salt as well as black pepper over them to season.
  • Give it a nice stir to mix well and bring the mixture to a boil.
  • Lower the heat and reduce it to a simmer; continue to cook them for about 10 minutes before tipping the contents of the pan into a colander to drain off the cooking liquid.
  • Mash the residues of the colander into coarse pulp and keep warm.
  • To cook the steak, place the beef in a bowl and drizzle tequila all over it.
  • Toss them several times to coat well with the alcohol and set aside, covered, for about 10 minutes to marinate; drain and set aside.
  • Brush oil over the base of a hot griddle pan and throw in the peppers.
  • Sear them for a couple of minutes, and stir in the marinated beef steaks.
  • Continue to sear them for another couple of minutes, flipping them over once or more until they are charred at several places.
  • Remove from heat and set aside.
  • Arrange few beef-bell pepper mixture along the middle of each tortilla and top it up with tomato salsa, refried beans and guacamole.
  • Add a dollop of sour cream on top and finish it off with final layer of grated cheese and chopped cilantro.
  • Serve and enjoy!
