How to Make Passion Fruit Pie

Ingredients needed to make Passion Fruit Pie:

For the base:

  • 3 cups Graham crackers, roughly crushed
  • ¼ cup dark brown sugar
  • 6 tbsp unsalted butter, softened

For the filling:

  • ¾ cup passion fruit pulp
  • 2 cans sweetened condensed milk
  • 3 egg whites
  • 1/3 cup hot water
  • 2 tbsp unflavoured gelatin

For the sauce:

  • ¾ cup red passion fruit pulp
  • 1 ½ tbsp hot water
  • ¾ tsp unflavoured gelatin
  • ½ cup sugar

Cooking instructions for Passion Fruit Pie:

  • Warm up your oven to 350 degrees F.
  • Dump the crushed crackers into a food processor, along with dark brown sugar as well as butter and blitz them 6-8 times, until they blend together into a flaky mixture.
  • Tip the mixture into a 9’’ pie plate and press it down along the sides and base of the pan.
  • Poke it with a fork at several places, about ½’’ spaced apart and place it in the hot oven.
  • Bake it for 8-10 minutes or until the pie base turns golden brown.
  • Transfer it onto a wire rack and set aside to cool completely.
  • To make the filling, pour the condensed milk into a blender, followed by the fruit pulp and blitz them briskly for 10 seconds or until they are mixed thoroughly.
  • Pour the mixture into a large bowl and set aside.
  • Whisk the gelatin into hot water until well combined and beat the mixture into the fruit-milk blend until they are mixed well.
  • Place the egg whites in a clean bowl and beat them thoroughly for 3-4 minutes or until they form soft peaks.
  • Scoop it out into the fruit pulp blend and fold them together to mix well; avoid over-mixing.
  • Spread this filling into the baked pie base and wrap its surface with a cling film.
  • Leave in the fridge to set while you start preparing the sauce.
  • To make the sauce, add the sugar and passion fruit pulp into a small pan and cook the mixture over moderate heat, stirring often, until the sugar dissolves completely and blends into the sauce.
  • Turn off the heat and pour it into a bowl; set aside.
  • Dissolve gelatin in water and beat it into the sauce until mixed well.
  • Place a lid on top and leave in the fridge for a couple of hours or until it turns thick.
  • Drizzle the sauce over the pie and return it into the fridge to chill for another hour.
  • Slice and serve chilled.
