How to Cook Goan Style Lobster

Ingredients needed to make Goan Style Lobster:

  • 4 live lobsters
  • 5 oz dessicated coconut
  • 1 fl oz coconut milk
  • 2 onions, sliced
  • 1 garlic clove, finely grated
  • 2’’ fresh ginger root, finely grated
  • 2 fl oz tamarind pulp
  • 4 bird’s eye red chillies
  • 1 green chili, finely chopped
  • 2 tbsp fresh cilantro, finely chopped
  • 4 whole cloves
  • 1 tsp whole black peppercorns
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • ½ tsp turmeric powder
  • Salt and freshly ground black pepper to taste
  • 2 tbsp vegetable oil

Cooking instructions for Goan Style Lobster:

  • Stuff the lobsters into one or more resealable plastic bags and leave them in the freezer for a couple of hours.
  • Drop them into a stockpot of boiling water and cook for a couple of minutes or until heated through.
  • Drain them off and transfer them immediately to a bowl of chilled water; drain once again and place them on a chopping board.
  • Chop out the meat from the shells while keeping the latter intact and devein it; set aside.
  • Heat a tsp of oil in a deep skillet and add the coconut to it.
  • Saute them for a while to fry them lightly and stir in the coriander and cumin seeds, cloves, peppercorns and chillies.
  • Continue to stir fry for a couple of minutes or until the mixture browns slightly and remove from heat to cool to some extent.
  • Tip it into the food processor and pulse them into a fine powder.
  • Drizzle rest of the oil in a wok and heat it over moderate heat.
  • Throw in the onions and stir fry for 5-7 minutes or until they caramelises.
  • Add the ginger, garlic as well as green chili and continue to saute for another couple of minutes while stirring at times.
  • Return the coconut-spice powder to heat and stir well to mix before cooking for about two minutes.
  • Add a dollop of the tamarind pulp into the mixture, along with a dash of ground turmeric and continue to cook for about 2-3 minutes.
  • Stir in a splash of coconut milk in a thin yet steady stream and continue to cook for a minute before stirring in the lobster meat.
  • Heat the mixture for a minute or two, until heated through and stir in the chopped cilantro.
  • Spoon the lobster meat onto serving plates and spoon the sauce over them.
  • Serve at once.
