How to Cook BBQ Sirloin with Chimichurri Sauce and Caprese Salad

Ingredients needed to make BBQ Sirloin with Chimichurri Sauce and Caprese Salad:
For BBQ sirloin:
- 4 ½ lb boneless beef sirloin
- Lots of freshly ground black pepper
For the chimichurri sauce:
- 2-3 long red chillies, seeded and finely chopped
- 2 large fistfuls flat leaf parsley, finely chopped
- 10-12 garlic cloves, peeled and finely chopped
- 5 tbsp red wine vinegar
- 4 tbsp dried oregano
- 5 tbsp cold water
- 5 tbsp extra virgin olive oil
- 2 tsp sea salt flakes
For the salad:
- 3/3 cup mozzarella cheese, diced
- 2 medium yellow tomatoes, sliced into wedges
- 2 medium red tomatoes, sliced into wedges
- 2 tbsp fresh basil, finely chopped
- ¼ cup fresh parsley, finely chopped
- ¼ tsp salt
- Freshly ground black pepper to taste
Cooking instructions for BBQ Sirloin with Chimichurri Sauce and Caprese Salad:
- To make the chimichurri sauce, toss the chopped garlic and chilies together in a small bowl.
- Throw in rest of its ingredients and stir them all together until properly blended.
- Wrap a cling film over the surface of the bowl and keep it aside for about 5-6 hours or even overnight to let the ingredients infuse their flavors into the sauce.
- To grill the steak, heat the charcoals in the outdoor BBQ, for a hour or until they turn white hot and the flames subside.
- Fit a grill rack about 10’’ above the hot coals.
- Rub the sea salt flakes all over the steak, followed by lots of black pepper.
- Place the seasoned steak on the grill rack, with the fatty side facing down.
- Grill the sirloin for about 4-6 minutes or until the fatty-side is seared considerably and turn golden brown.
- Flip it over and cook the other side for about half an hour.
- Flip the sirloin steak yet again and cook the fatty-side for about 25 minutes for medium done-ness; adjust the cooking time according to your preference of rareness of a steak.
- Remove the steak from the BBQ and let it rest in a plate for about 10 minutes.
- Meanwhile, toss the tomatoes, basil, parsley and mozzarella together in a bowl and sprinkle a dash of the seasonings.
- Toss them further and set aside.
- Cut it into thick slices and arrange 2-3 of them on each serving plate.
- Smother them with chimichurri sauce and serve alongside the fresh salad.
