How to Cook Maiale Alla Montanara

Ingredients needed to make Maiale Alla Montanara:

  • 4 large pork chops
  • 1 medium onion, finely chopped
  • 5 oz round shiitake mushrooms, sliced
  • 3 ½ oz oyster mushrooms, sliced
  • 3 ½ o fresh porcini mushrooms, sliced
  • 10 ½ oz taleggio cheese
  • 20 thin asparagus spears
  • 4 tbsp double cream
  • Salt and freshly ground black pepper
  • 10 tbsp olive

Cooking instructions for Maiale Alla Montanara:

  • Place the pork chops in a bowl and drizzle the olive oil over them.
  • Sprinkle a pinch of salt and ground black pepper generously over them and flip them several times to coat well with the oil as well as to season uniformly.
  • Transfer the pork chops onto a hot griddle pan and cook each side for a couple of minutes, until it is seared evenly and browns nicely.
  • Dip the asparagus into rest of the olive oil, used for coating the meat, and rub a dash each of seasonings over them.
  • Arrange them onto the hot griddle pan and sear for 5 minute, turning them over once while cooking.
  • Drizzle 4 tbsp of the same olive oil into a skillet and throw in the chopped onion.
  • Sauté them for a while, stirring regularly, until they caramelize and stir in the mushrooms.
  • Sprinkle the seasonings over them and stir fry for about 3 minutes or until soften slightly.
  • Whisk in the cream and bring it down to a simmer.
  • Continue to simmer for a couple of minutes and remove from heat.
  • Transfer the pork chops onto a baking tray and smother them with 2 tbsp of the creamed mushrooms.
  • Arrange a couple of taleggio cheese slices on top and drizzle more olive oil over them.
  • Cook in the oven at grill mode for a couple of minutes or until the cheese just melts.
  • Place 5 asparagus spears onto each serving plate, side by side, and top each serving up with a pork chop.
  • Serve warm.
