How to Make Stuffed Pancake Rolls

Ingredients needed to make Stuffed Pancake Rolls:

For the stuffing:

  • 2 cups fresh coconut, grated
  • 1 tbsp granulated sugar
  • 10 tbsp dark brown sugar
  • One 3’’ cinnamon stick, broken into half
  • Dash of salt

For the pancake:

  • ½ cup cornstarch
  • 1 cup rice flour
  • 1 egg, beaten
  • 1 ¾ cup coconut milk
  • 3 drops green food colouring (optional)
  • ½ tsp salt
  • Vegetable oil

For the syrup:

  • ½ cup palm sugar syrup
  • 1 cup coconut milk
  • 3 cups water
  • 1 pandan leaf
  • Dash of salt to taste

Cooking instructions for Stuffed Pancake Rolls:

  • Toss the grated coconut and both kinds of sugar together in a bowl.
  • Sprinkle ¼ tsp salt over them and give it a nice stir to mix.
  • Transfer the mixture to a sauce pan and drop the cinnamon stick.
  • Stir-fry the mixture over moderately slow flame for about 5 minutes, while stirring often, until the stuffing dries up.
  • Remove from heat and set it aside after discarding the cinnamon stick.
  • To make the pancake, stir the cornstarch, rice flour and a dash of salt together, in a mixing bowl.
  • Pour in the coconut milk, followed by the beaten egg plus few drop of food coloring and stir them well into a smooth batter, free of any lumps.
  • Pour small amount of oil in a  medium saucepan and spread it with the back of a spoon or spatula.
  • Add 3 tbsp of the batter at the centre of the pan and tilt the pan slightly to spread it into a thin circle.
  • Fry the bottom side for a minute before flipping it over and frying it for another minute or until it is just set; don’t let it brown.
  • Place 2 tbsp of the filling along one side of the pancake and flip the side over the filling.
  • Tuck the open ends into the folded portion and fold it once more to make a roll.
  • Press it slightly to spread the filling evenly throughout the pancake.
  • Lift it gently from the pan and arrange it on a serving plate.
  • Make rest of the pancake in a similar fashion and allow them to cool to room temperature.
  • To make the syrup, combine all its ingredients together and bring the mixture to a boil over moderate heat.
  • Reduce heat and let it simmer for about 10 minutes or until it thickens considerably.
  • Drizzle the sauce over the pancakes and serve.
