How to Bake Shoofly Pie

Ingredients needed to make Shoofly Pie:

For the crust:

  • 1 ¾ cups all purpose flour, plus more for dusting
  • 1 ½ sticks unsalted butter, cold and chopped into ½’’ cubes
  • 2 tbsp granulated sugar
  • 1 ½ tsp apple cider vinegar
  • ½ tsp salt

For the filling:

  • 1 cup all purpose flour
  • 2 tbsp unsalted butter, softened
  • 1 cup molasses
  • 1 large egg
  • 1 tsp baking soda
  • ¾ cup dark brown sugar, packed

Cooking instructions for Shoofly Pie:

  • To make the crust, dump the flour into a food processor, along with sugar, 1/3 of the butter cubes as well as a dash of salt and pulse them thrice, until they clump together to form a flaky mixture with few small balls of butter still visible.
  • Add a splash of 3 tbsp icy-cold water as well as apple cider vinegar and continue to pulse 3 more times, until they are just combined but don’t gather together to form a ball.
  • Wrap the dough in a plastic sheet and pat it into a round disc before leaving in the fridge for an hour or until firm.
  • Place the dough onto a lightly floured working surface and flatten it out, using 11’’ wide circle, using a floured rolling pin.
  • Spread it onto a 9’’ pie mold and crimp the overhanging edges along the sides of that pan.
  • Leave in the fridge for an hour or until the filling is ready.
  • Spread a baking sheet across a rack, positioned in the middle of an oven and warm it up to 35 degrees F.
  • To make the filling, empty a cup of flour into a heat-proof bowl and stir in the butter and brown sugar until well mixed;  reserve 2/3 of it as topping for the pie.
  • Crack the egg into the remaining dry mixture and stir in a dash of baking soda as well as molasses until blended thoroughly.
  • Pour in ¾ cup boiling water into it and beat them together until they form a uniform, smooth filling.
  • Spread the filling into the crust and sprinkle the reserved dry mixture over it to cover completely.
  • Place the pie mold onto the preheated baking sheet and bake in the hot oven for 10 minutes.
  • Lower the temperature of the oven to 350 degrees F and bake further for 45 minutes, or until the filling is set and the crust turns golden brown.
  • Allow to cool on a wire rack and carve out wedges.
  • Serve warm.
