How to Bake Pumpernickel Bread

Ingredients needed to make Pumpernickel Bread:
- 2 ½ cups bread flour
- 2 ¾ tsp active dry yeast
- 1/3 cup raisins
- 1 cup rye flour
- 3 tbsp molasses
- ½ tsp instant coffee
- 1 egg white
- 1 egg
- 3 tbsp instant potato flakes
- 2 tbsp butter
- 2 ½ tsp unsweetened cocoa powder
- 1 tsp salt
- 1 ¼ cups water, divided
- 1 tbsp caraway seeds
Cooking instructions for Pumpernickel Bread:
- Pour a cup of water into a small saucepan and drop a knob of butter into it.
- Add the molasses, caraway seeds as well as raisins into it and stir them all together to mix well.
- Bring the mixture to a boil over moderately high heat and turn it off.
- Whisk in the potato flakes until well combined and set aside until it cools slightly.
- Place both the flours in a bowl and stir in the coffee, cocoa powder as well as a dash of salt until mixed properly.
- Pour ¼ cup water in a bowl and whisk in the yeast until it dissolves.
- Pour the mixture into the dry ingredients, along with the molasses and crack the egg into it.
- Stir them all together until they clump to form a dough and knead it for about 5-6 minutes until it becomes smooth with a hint of stickiness.
- Shape it into a ball and transfer it into a greased bowl.
- Roll it along the sides of the bowl to oil it slightly, cover and set aside for an hour or until it doubles in size.
- Place it onto a lightly-floured working surface and knock them down for a minute.
- Work the dough with your hands to mold it into a rectangular loaf and transfer it into a 9’’x5’’ loaf pan.
- Let it rest for another hour or until it rises to double its size.
- Warm up your oven to 350 degrees F.
- Whisk the egg white along with a splash of water until well combined and paint it all over the loaf to glaze.
- Bake the bread for 40 minutes and its internal temperature rises to 190 degrees F.
- Remove from oven and set aside to cool.
- Carve out semi-thick slices and serve.
