Cooking time: 30 mins

Ingredients needed to make Orange-Chocolate Chip Blondies:

  • 1 cup + 2 tbsp all purpose flour, plus more for dusting
  • 1/3 cup orange marmalade
  • ¾ cup chocolate chips
  • Juice of an orange
  • 1 cup light brown sugar
  • ¼ lb unsalted butter, softened
  • ½ tsp pure vanilla extract
  • 1 egg
  • 1 tsp baking powder
  • ¼ tsp salt
  • Non-stick cooking spray

Cooking instructions for Orange-Chocolate Chip Blondies:

  • Place a rack midway within the oven and warm it up to 350 degrees F.
  • Spread a parchment paper across the 8×8’’ baking dish and grease it with cooking spray.
  • Sprinkle some flour over it and shake off any excess; set aside.
  • Stir the salt and baking powder into flour and stir them all together in medium mixing bowl.
  • Cream the butter, using an electric mixer, along with sugar, for about a couple of minutes or until the sugar dissolves completely and the mixture fluffs up.
  • Crack the egg into it, followed by splashes of orange juice as well as vanilla extract and continue to beat the mixture until well combined.
  • Fold in the dry mixture gradually, beating it into the mixture after each addition, until all of it is incorporated into the mixture to form a batter free of lumps; avoid over-mixing.
  • Fold in the chocolate chips and set aside.
  • Transfer it within the prepared mold and level the surface with a spatula.
  • Spoon in small splodges of the orange marmalade on top of the batter, spaced apart and fold them in gently with the tip of a knife.
  • Bake it in the oven for half an hour or until the surface puffs up and turns golden.
  • Insert a toothpick through the centre of the blondies and bring it out; a spotless toothpick indicates that it is baked through.
  • Take it out of the oven and cool in the pan for about 10 minutes or until cool enough to handle.
  • Remove from the pan onto a plate and slice out 8 large square blondies.
  • Serve right away or seal them in an airtight container to store at room temperature for as long as 3 days.
