How to Bake Dauphinoise Potatoes With Coriander Carrots

Ingredients needed to make Dauphinoise Potatoes With Coriander Carrots:

  • 2 lb baking potatoes, peeled
  • 4 garlic cloves
  • Salt and freshly ground black pepper to taste
  • 17 ½ fl oz double cream

For the coriander roots:

  • 24 baby carrots, thinly sliced
  • 1 tsp caster sugar
  • 1 oz butter
  • 2 tbsp fresh cilantro leaves, coarsely chopped
  • Salt and freshly ground black pepper to taste

Cooking instructions for Dauphinoise Potatoes With Coriander Carrots:

  • Warm up your oven to 320 degrees F and dip the potatoes in a bowl of cold water to stop them from getting browned.
  • Cut the potatoes into thin slices, each about ½’’ in thickness and place them in a bowl.
  • Slice off either ends of the garlic cloves but leave them unpeeled.
  • Grate them likewise in a grater so that only the flesh is grated and the skin will remain behind.
  • Add the grated garlic to the bowl of sliced potatoes and sprinkle a dash of salt as well as generous amount of black pepper to taste.
  • Smother the potatoes with the cream and toss them all together until well combined.
  • Tip the contents of the bowl into a pre-greased gratin dish and spread them across it.
  • Press it down with a spatula or back of a spoon so that the cream oozes to the surface of the potatoes while the latter forms a solid layer.
  • Place the dish in the oven and bake for an hour or until the potatoes are cooked through and becomes mushy; in case the cream seems to dry up, lower the oven temperature slightly.
  • Meanwhile, to make the coriander carrots, dump the baby carrots into a pan, along with a couple of tbsp of water, sugar and a knob of butter.
  • Heat the mixture until it starts simmering and put a lid on.
  • Cook the carrots over gentle heat, for about 5-6 minutes or until the veggies soften.
  • Sprinkle a dash of salt and black pepper to season and stir in the cilantro leaves.
  • Remove the gratin potatoes from the oven and allow it to cool for about 5 minutes.
  • Cut out medium squares and serve alongside the coriander carrots.
