Ingredients needed to make Chocolate Brownies:
- 9 oz plain chocolate, broken into smaller pieces
- 5 eggs
- 5 ½ oz all purpose flour, sifted
- 12 oz dark muscovado sugar
- 1’’ piece fresh ginger root, chopped
- 9 oz butter
- 2 tbsp rum
- 4 ½ oz pecan or walnuts, roughly chopped
- Icing sugar, for dusting
Cooking instructions for Chocolate Brownies:
- Warm up your oven to 350 degrees F and spread a grease-proof paper across a 12’’ x 8’’ cake pan.
- Boil small amount of water in a pan before reducing it to a simmer.
- Add the chocolate chunks as well as a large splodge of butter in a heatproof bowl and hold it just above the water so that it doesn’t come in contact with the water surface.
- Keep stirring the mixture until the chocolate melts and the mixture turns glossy.
- Turn off the heat and set aside to cool it to some extent.
- Whisk the eggs and sugar together in a separate bowl with an electric mixer, until the sugar melts and they blend into a thick and fluffy, pale yellow mixture.
- Pour in the melted chocolate, along with a splash of rum and whisk them thoroughly until they form a smooth uniform mixture.
- Add the flour, small amount at a time, and fold them into the mixture, until all of the flour is used up.
- Stir in the chopped ginger and nuts until they are evenly distributed throughout the batter.
- Pour the batter into the lined cake pan and place it into the oven.
- Bake the brownies for about half an hour or until the surface sets yet the center remains sticky when a skewer is inserted through its center.
- Take the pan out of the oven and set aside to cool in the pan itself.
- Once the brownie cools, slice them into small 18-20 squares or any of your preferred shapes and remove them carefully from the pan.
- Stack them up on a serving plate and cover them with a generous dusting of icing sugar; sift the sugar before you use it for dusting.
- Have these brownies just like that or pair them with your favorite dessert or ice cream.
