How to Cook Spicy Root Vegetables Indian Style

Ingredients needed to make Spicy Root Vegetables Indian Style:

  • 14 oz small potatoes, halved
  • 10 oz parsnips, peeled and diced
  • 10 oz carrots, peeled and diced
  • 10 oz sweet potatoes, peeled and diced
  • 4 garlic cloves, peeled and minced
  • 3 onions, peeled and finely chopped
  • 7 oz baby spinach leaves, washed
  • 3 oz French beans, trimmed and halved crosswise
  • 1 ½’’ fresh ginger root, peeled and grated
  • 2 tbsp tomato puree
  • 2 ½ oz cashew nuts, crushed
  • 1 ¾ pint vegetable stock
  • 4 tbsp double cream
  • Juice of a lime
  • 1 Scotch bonnet chili, seeded and chopped
  • 1 cinnamon stick, halved
  • 1 tsp ground turmeric
  • 2 fresh bay leaves
  • 1 ½ tsp ground coriander
  • Pinch of dark brown sugar
  • Salt and freshly ground black pepper to taste
  • 2 tbsp vegetable oil

Cooking instructions for Spicy Root Vegetables Indian Style:

  • To cook the root vegetables, heat oil in a casserole over moderate heat and throw in the onions.
  • Stir-fry them for about 5 minutes or until they caramelize and stir in the ginger, garlic as well as chili.
  • Continue to cook for another 5 minutes, stirring often, and sprinkle the spices on top.
  • Give it a nice stir and cook for a minute or until the spices give out a pleasant aroma.
  • Add the root vegetables and continue to saute them for about 5 minutes or until they become tender and turn golden brown.
  • Pour in the stock, followed by the tomato puree and add the bay leaves to the mixture.
  • Sprinkle the crushed nuts and brown sugar over the mixture and stir them all together until well combined; season with a dash of salt and black pepper.
  • Bring it to a boil before reducing the mixture to a simmer.
  • Continue to cook the mixture for about 20 minutes or until the veggies are cooked through and the thick sauce coats them nicely.
  • Stir in the spinach plus beans and cook for about 3 minutes before stirring in the cream.
  • Drizzle half of the lime juice over the veggies and give it a nice stir to mix, adjust the seasonings.
  • Remove from heat and transfer it to a serving bowl.
  • Top it up with chopped cashew nuts and serve hot.
