How to Bake Cappuccino Eclairs

Yields: 6-8 eclairs

Ingredients needed to make Cappuccino Eclairs:

For the pastry:

  • 4 oz all purpose flour, plus more for dusting
  • 3 eggs
  • 4 fl oz water
  • 2 ½ oz unsalted butter
  • ½ tsp ground ginger
  • Pinch of salt

For the filling:

  • 1 fl oz strong coffee
  • 10 ½ fl oz double cream
  • 2 oz icing sugar
  • 1 vanilla pod, split and seeds scraped out

For the topping:

  • 6 oz icing sugar
  • 2 oz unsalted butter
  • 2 tbsp double cream
  • 1 fl oz extra strong coffee
  • 4 oz soft dark brown sugar

Cooking instructions for Cappuccino Eclairs:

  • Warm up your oven to 400 degrees F.
  • To make the pastry, add a knob of butter into a saucepan, along with water and heat it until it begins to boil.
  • Remove the pan from heat once the butter melts and fold in the flour, along with a dash of ground ginger.
  • Continue to beat the mixture with a wooden spoon, until it begins to leave the sides of the pan and clump together.
  • Crack the eggs, in sequence, and continue to whisk them into the mixture until all of them blend together into a uniform mixture.
  • Spoon the mixture into a pastry bag and set aside for 5-10 minutes to let it cool down.
  • Dust a baking sheet generously with flour and pipe 6-8 strips of dough onto it, spaced about 2’’ apart.
  • Bake them in the oven for half an hour or until they turn crispy golden brown.
  • Remove from heat and allow it to cool down.
  • Pour the cream into the bowl fitted to a stand mixer and add the scraped vanilla seeds to it.
  • Whisk them together until they form soft yet firm peaks.
  • Beat in icing sugar, along with a splash of coffee and blend them into a uniform mixture.
  • Slice the eclairs crosswise, into two equal halves pipe the coffee cream onto one half.
  • Cover it with the other half and make rest of the éclair sandwiches in a similar fashion.
  • To make the topping, dump all its ingredients, except icing sugar, into a saucepan and heat the mixture over slow flame until the sugar dissolves.
  • Remove the pan from heat and stir in the icing sugar until well combined.
  • Set aside to cool completely, stirring at times, until it thickens when cooled.
  • Top the eclairs with the above mixture and serve right away.
