How to Make Chocolate Haupia Pie

Ingredients needed to make Chocolate Haupia Pie:
- 2 ½ cups chocolate graham crackers
- 3 oz 72% cacao chocolate, roughly chopped
- 1 ½ cups whole milk
- 1 can (13 ½ oz) can coconut milk
- 6 tbsp cornstarch
- 10 tbsp unsalted butter, melted
- 5 tbsp sugar
- 2 tsp vanilla extract
Cooking instructions for Chocolate Haupia Pie:
- Crush the graham crackers into a large mixing bowl and drizzle the melted butter into it.
- Toss them together until well coated and place ½ cup of it, covered, in the fridge.
- Tip rest of it into a 9’’ pie dish and press it gently into the base and sides of the dish.
- Throw in the chocolate pieces in a medium bowl and heat it in the microwave at high, until it melts completely.
- Stir the melted chocolate into a thick, glossy liquid and set aside.
- Empty the can of coconut milk into a saucepan, along with the milk, sugar, vanilla and cornstarch.
- Whisk them together until they blend thoroughly and cook over moderate heat, while beating it continuously, until it turns thick.
- Lower the heat and continue to cook at slow flame, for another 10 minutes, while stirring it relentlessly.
- Pour the melted chocolate into the simmering mixture and fold them together until well combined.
- Turn off the heat and tip it over the layer of graham cracker crust in the pie dish.
- Spread it evenly across the crust, using a spatula, to smooth out the surface and set aside for 10 minutes to cool slightly.
- Wrap it up in a plastic sheet and leave it in the fridge overnight.
- On the following day, sprinkle the reserved crumbs evenly on top of the cream pie.
- Slice and serve chilled.
