How to Bake Bakewell Tart

Ingredients needed to make Bakewell Tart:
For the pastry:
- 15 oz plain flour, plus more for dusting
- 2 oz ground almonds
- 2 egg yolks
- 1 large egg, beaten
- 3 ½ oz caster sugar
- 9 oz unsalted butter, softened
- ½ tsp salt
For the filling:
- 2 oa flaked almonds
- 14 oz ground almonds
- ½ tsp almond essence
- 8 eggs, beaten
- 3 tbsp raspberry jam
- 6 oz caster sugar
Cooking instructions for Bakewell Tart:
- Empty the cups of flour into the bowl of your food processor and add the almonds, butter, sugar and a dash of salt into it.
- Process them until they form a crumble-like texture, resembling breadcrumbs.
- Crack the egg into it, along with the egg yolks and continue to run the processor until the ingredients gather together to form a smooth dough.
- Wrap a cling film around it and leave it in the fridge for about half an hour to chill.
- Meanwhile, prepare your oven by preheating it to 360 degrees F and butter a 9’’ tart pan, followed by a generous dusting of flour.
- Peel off the cling film from the pastry and place it on a cold, lightly floured working counter.
- Roll it out into a rough circle, slightly larger than the prepared tart pan and spread it across the pan.
- Cut off any excess pastry hanging out from the sides and poke its bottom with a fork.
- Cover it with a sheet of parchment paper and place some uncooked rice or baking beans in it.
- Bake in the oven for about 15-20 minutes and take it out of the oven once it turns golden.
- Do away with the parchment paper along with the beans or rice in it and set the tart base aside to cool.
- Set the oven temperature down to 330 degrees F.
- To make the filling, toss the caster sugar and ground almonds together in a bowl until well combined.
- Whisk in the beaten eggs as well as a splash of almond essence and stir them well together into a smooth, uniform mixture.
- Spread a large dollop of the raspberry jam across the base of the pastry and fill it up with the above mixture.
- Level the surface with the back of a spoon or spatula and top it up with flaked almonds.
- Bake in the oven for half an hour or until the filling is cooked through and the tart evenly browns.
- Take it out of the oven and let it rest for about 10 minutes to cool.
- Serve warm or chilled and enjoy!
