How to Bake Galician Pie

Ingredients needed to make Galician Pie:
- 5 oz chorizo, peeled and chopped
- 5 oz monkfish fillets, chopped into 10 equal pieces
- 4 oz mussels, cooked
- 4 oz squid rings
- 2 oz prawns, peeled, deveined and cooked
- 1 egg, lightly beaten
- 2 rashers smoked bacon, chopped
- 9 oz cherry tomatoes, halved, seeded and chopped
- 3 garlic cloves, finely chopped
- 2 small red onions, finely chopped
- 2 red bell peppers, roasted, peeled and chopped
- Handful of fresh flatleaf parsley, chopped
- 1 tsp harissa paste
- Pinch of cayenne pepper
- 2 sheets packaged puff pastry
- 2 tbsp olive oil
- A splodge of butter, softened
- Sea salt and freshly ground black pepper to taste
Cooking instructions for Galician Pie:
- Prepare your oven by preheating it to 425 degrees F and rub the knob of butter all over the sides and base of a pie dish.
- Drizzle oil in a heavy-bottomed frying pan and heat it over moderate heat.
- Throw in the bacon as well as chorizo and saute them until they ooze out fat and browns slightly; stir at times while frying.
- Add the garlic plus onions and continue to stir-fry the mixture for about 4-5 minutes or until they become tender and the onions caramelises.
- Add the chopped tomatoes, along with a dash of cayenne pepper and stir them well together.
- Leave the mixture on heat to simmer it for about 5 minutes or until most of the juice running out from the tomatoes is absorbed.
- Throw in the red bell pepper and stir fry for a minute.
- Sprinkle the seasonings over the monkfish pieces and toss them well together before adding them to the cooking mixture, along with rest of the seafood.
- Cook them for a couple of minutes and stir in the chopped parsley, followed immediately by the harissa paste; adjust the seasonings.
- Spread a pastry sheet across the greased pie dish and fill it up with the prepared mixture.
- Place the other pastry sheet on top and press the sides firmly to seal.
- Cut off the excess pastry hanging out of the pan and paint the surface with the beaten egg.
- Bake the pie in the oven for about 20 minutes or until it puffs up and turns crispy golden.
- Take it out of the oven and set aside to cool slightly.
- Slice the pie into quarters and serve right away.
