How to Cook Healthy Chicken Fajitas

Getting a well cooked healthy chicken fajita is quite hard especially on the supermarket shelves or in a restaurant; but you can always make them for yourself. Preparing your own chicken fajita is very easy and interesting; it allows to take charge of ingredients and spices.

Fajitas happen to be one of the popular Mexican dishes that commonly uses beef together with vegetables. The taste of fajita always lingers in mouths of many not only because of its sweet aroma but also the right usage of spices and herbs.

A way to make healthy chicken fajitas

Ingredients

  • 2 pounds of chicken breasts; skinless, boneless
  • 1 large onion, sliced into long thin strips
  • Safflower
  • 2 bell pepper, chopped into long thin strips (both green and red)
  • Peanut
  • 2 tablespoons of canola
  • 2 tablespoon Lime juice
  • Garlic clove, fine ground or minced
  • 1/2 teaspoon of cilantro, well chopped
  • Chilli powder
  • 1 Jalapeno, minced, seeded
  • 4 tablespoon olive oil
  • 7 flour tortillas
  • You can also use Salsa, sour cream or sliced avocados for topping

Instructions

  1. It is important to note that chicken breasts have sizes. Consequently when cutting and slicing the chicken breasts do it horizontally; this is to ensure that they attain a thickness of about ½ inch. Do not forget to trim the chicken breasts off the fat and sinew. It is also important to note that pounding the breast is not appropriate as it leads to chicken fajitas with poor texture and consistency.
  2. In a clean glass container, mix gently all the marinade ingredients (Safflower, bell peppers, Peanut, canola, Lime juice, Garlic clove, cilantro and Jalapeno). Then to the container, add the chicken slides, mix well, cover and let them marinate for about an hour at the room temperature. You can also marinate them in a fridge but do it for 8 hours and remove them about an hour earlier before you cook; this allows them be at the room temperature. Marinating makes the chicken pieces absorb the seasoning better.
  3. The next step is removing the chicken slices from the marinade and sprinkling the pieces with salt.
  4. Meanwhile, you can be heating a large skillet/ frying pan over high heat for about 2 minutes. Add canola oil to the skillet and once the oil begins to smoke, put the chicken breasts for making healthy chicken fajita to the pan.
  5. Allow the chicken to cook for 4-5 minutes undisturbed; until a good sear is formed. Make sure all the side of the chicken pieces have the sear by turning the pieces over.
  6. Once you have the seared chicken pieces, cover them with aluminium foil for about 7 minutes. This will help them retain heat as you prepare onions and pepper. Cook the onions and pepper in a large skillet and once they are fully cooked; sear with some blackening.
  7. Warm the tortillas. You can now top the tortillas with salsa, guacamole or even avocados.
  8. Serve your healthy chicken fajita recipe to 7 people while hot.
