How to Cook Yellow Rice With Mixed Bean Curry

Ingredients needed to make Yellow Rice With Mixed Bean Curry:

For the mixed bean curry:

  • Two (15 oz each) cans beans, drained and washed
  • 2 garlic cloves, coarsely chopped
  • 1 onion, coarsely chopped
  • 1’’ fresh ginger, peeled and coarsely chopped
  • 1 can (28 oz) chopped tomatoes, juice reserved
  • 2 tbsp fresh cilantro, roughly chopped
  • 1/2 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • Red pepper flakes, to taste
  • ½ tsp salt
  • 2 tbsp vegetable oil
  • 1 tbsp water

For the yellow rice:

  • 2 cups jasmine rice, rinsed and drained
  • 2’’ cinnamon stick
  • ¾ tsp ground turmeric
  • 3 whole cloves
  • 2 tbsp butter
  • 1 bay leaf
  • 1 tsp salt
  • 2 cups water

Cooking instructions for Yellow Rice With Mixed Bean Curry:

  • For the curry, throw in the chopped garlic, ginger as well as the onions into a blender, along with a splash of water and pulse them into a smooth paste.
  • Drizzle oil in a large pan and heat it over moderate flame.
  • Throw in the cumin, coriander as well as the garam masala and stir fry them for a couple of minutes or until the mixture gives out a pleasant spicy aroma.
  • Stir in the prepared paste and continue to sauté them for another couple of minutes, stirring often, until the water ebbs away.
  • Empty the cans of chopped tomatoes and beans into it, along with the red pepper flakes, cilantro and a dash of salt.
  • Stir them all together and cook the mixture until it begins to boil.
  • Reduce it to a simmer and continue to cook for about half an hour, stirring at times.
  • While the curry cooks, start making the rice by emptying the cups of rice into a medium pot, and fill it up with water.
  • Drop in the whole spices, followed by a dash of salt and cook the mixture until it starts boiling.
  • Put a lid on and reduce it to a simmer.
  • Cook likewise for about 10 minutes and turn off the heat.
  • Set aside, covered for another 10-15 minutes and remove the lid to do away with the whole spices.
  • Drizzle a lashing of melted butter on top and spoon it onto the centre of the serving plates.
  • Spoon the bean curry on top and serve warm.
