How to Bake Yorkshire Pudding

Cooking time: 1 hour

Ingredients needed to make Yorkshire Pudding:

For the pudding:

  • 10 oz all purpose flour
  • 4 oz beef dripping
  • 8 eggs
  • 1 pint full fat milk
  • Salt and freshly ground black pepper to taste

For red onion gravy:

  • 2 red onions , finely sliced
  • 2 garlic cloves, peeled and finely grated
  • 1 thyme sprig
  • 7 fl oz red wine
  • 2 tbsp balsamic vinegar
  • 1 ¼ oz butter
  • 2 pints beef stock

Cooking instructions for Yorkshire Pudding:

  • Warm up your oven to 430 degrees F.
  • Empty the cups of all purpose flour into a food processor, along with a dash of salt and ground black pepper.
  • Crack the eggs into it and pulse them into a smooth paste.
  • Pour in the milk and continue to process them into a smooth batter.
  • Tip the batter into a jug and set aside in a refrigerator overnight to rest.
  • Arrange the Yorkshire pudding tins on a baking dish and spread the beef dripping across the base and sides of those tins.
  • Heat them in the oven for about 10 minutes or until they start smoking.
  • Divide the batter equally into the hot tins and bake in the oven for about 10-15 minutes or until they puff up along the edges and their surface turn golden brown.
  • While the Yorkshire pudding bakes, heat a skillet over moderate heat and add a dollop of butter to it.
  • Melt the butter until it begins to foam and throw in the garlic.
  • Sauté it for a minute or until it becomes fragrant and stir in the onions.
  • Continue to sauté for about 8-10 minutes, stirring at times, until they soften but don’t caramelize or brown.
  • Add a splash of red wine and stir them well together to mix.
  • Continue to simmer the sauce until it reduces it half its previous volume and pour in the beef stock.
  • Continue to heat the mixture until it starts boiling and reduce the gravy to a simmer at once.
  • Whisk in the balsamic vinegar, followed by the thyme and continue to simmer for about 15 minutes.
  • Sprinkle a dash of salt and fair amount of black pepper to season and remove from heat.
  • Arrange the Yorkshire puddings on serving plates and smother them with the gravy.
  • Serve warm.
