How to Cook Rose Veal Tonnato

Ingredients needed to make Rose Veal Tonnato:

  • 1 lb 5 oz rose veal fillet, trimmed
  • 2 banana shallots, peeled and halved longitudinally
  • 2 tbsp baby capers, drained
  • 1 celery stalk, trimmed and sliced into halves
  • 1 carrot, halved
  • 1 tsp flaked sea salt
  • 6 black peppercorns
  • Small bunch fresh thyme sprigs, leaves picked
  • Small handful flat leaf parsley, coarsely chopped
  • 18 fl oz chicken stock
  • 7 fl oz English white wine
  • 1 bay leaf
  • Fresh ground black pepper to taste
  • 12 caper berries, for serving
  • Thin lemon wedges, for serving

For the mayonnaise:

  • 2 egg yolks
  • 2 tsp Dijon mustard
  • 1 ½ tbsp fresh lemon juice
  • 3 ½ fl oz sunflower oil
  • 1 tbsp baby capers, drained
  • ½ tsp caster sugar
  • ¼ tsp kosher salt, plus more if necessary
  • 2 fl oz olive oil

Cooking instructions for Rose Veal Tonnato:

  • Toss the carrots, shallots as well as celery into a large skillet and scatter the thyme leaves, peppercorns and a bay leaf over them,
  • Add a splash of white wine, followed by the chicken stock and stir them all together to mix well.
  • Season with the measured sea salt and cook over gentle heat until it starts simmering.
  • Continue to cook the broth likewise for half an hour.
  • Lower the meat into the simmering stock and lower the flame until the stock barely produces any bubbles.
  • Cook the veal in the stock for 15 minutes, flipping it over from time to time while poaching and drain it out.
  • Place it into a chopping board and allow the meat to cool slightly; set 3 ½ fl oz of the poaching liquid aside.
  • Rub fair amount of ground black pepper on either side of the veal and wrap it up in a plastic sheet tightly.
  • Leave it in the refrigerator overnight to chill.
  • To make the mayo, place the egg yolks in a food processor and spoon in a tbsp of the lemon juice.
  • Add the capers, sugar as well as mustard into it and sprinkle a dash of the measured salt and large pinch of ground black pepper.
  • Cover and whiz them until they blend thoroughly.
  • Pour the oils gradually through an opening in the lid, while the motor still runs, until each of them are incorporated into the mixture to form a smooth and thick emulsion.
  • Pour in 2 tbsp of the reserved poaching liquid and blend further to thin it out slightly.
  • Scrap it out into a bowl and adjust the seasonings if necessary.
  • Leave it in the fridge overnight to chill after wrapping the surface of the bowl with a cling film.
  • Peel off the plastic wrap from the veal and carve out very thin slices.
  • Arrange them onto serving plates, so that their edges overlap each other and smother them with large spoonfuls of chilled mayo.
  • Scatter the baby capers on top and sprinkle the chopped parsley over them.
  • Finish it off with the caper berries, cracked black pepper and a dash of flaked sea salt on top.
  • Serve alongside lemon wedges.
