How to Make Lime Mousse

Ingredients needed to make Lime Mousse:
- ¼ cup sweetened flaked coconut
- 1 cup + 2 tbsp water
- 6 eggs, separated
- 2 cups granulated sugar
- Juice and freshly grated zest of 2 large limes
- ½ cup cornstarch
- ½ cup flour
- 5 tbsp heavy cream
- 2 tbsp unsalted butter
- Pinch of salt
- ½ tsp vanilla extract
Cooking instructions for Lime Mousse:
- Empty a cup of water in a saucepan and heat it over moderate heat until it gives out steam; avoid boiling.
- Place the cornstarch and flour in a bowl and empty the cups of sugar into it.
- Stir them all together, along with a dash of salt until well combined and fold the mixture into the simmering water until they form a lump-free batter.
- Cook the mixture while stirring relentless, until they thicken slightly.
- Beat in the egg yolks in a separate bowl, along with a splash of vanilla as well as lemon zest until they blend into a pale yellow, uniform mixture.
- Ladle a small portion of the simmering mixture into the whisked egg yolks and stir them together quickly to temper.
- Return the tempered blend back into the pan while beating it into the simmering mixture at the same time until all of it us used up.
- Add a splash of lime juice, followed by cream as well as butter and stir them all together to mix well.
- Continue to cook for a couple of minutes, stirring constantly, until the mixture thickens considerably and turn off the heat.
- Place the egg whites in a large bowl and whisk them thoroughly until they form stiff yet moist peaks.
- Fold it into the cooked mixture gently until they blend together into a smooth mousse.
- Spoon it into 4 large serving bowls and top each serving with a tsp of shredded coconut.
- Leave in the fridge for a couple of hours or until they set and serve chilled.
