How to Make Japanese Cheesecake

Yields: 1 cake

Ingredients needed to make Japanese Cheesecake:

  • 250 gm cream cheese, softened
  • 2 tbsp apricot jam
  • 30 gm corn flour
  • 5 egg whites
  • 3 egg yolks
  • 180 ml milk
  • ½ tbsp water
  • 1 tsp fresh lemon juice
  • 70 gm caster sugar
  • 2 tbsp white vinegar

Cooking instructions for Japanese Cheesecake:

  • Warm up your oven to 350 degrees F and spread a sheet of parchment paper over the base of a 7’’ round cake pan.
  • Place the cream cheese in a bowl and beat in the milk to soften the latter a bit.
  • Sprinkle half of the sugar and corn flour into it, followed by egg yolks as well as a splash of lemon juice.
  • Beat them together until well combined and set aside.
  • Whisk the egg whites with vinegar until they blend together and the mixture froths up.
  • Incorporate rest of the sugar into it in a couple of batches until well combined and the final mixture forms stiff peaks.
  • Scrape out 1/3 of it into the cheese mixture and fold them together gently to mix well.
  • Fold in rest of the whisked egg whites until all of it is fully incorporated and spoon it into the lined pan.
  • Smooth out its surface with a rubber spatula and place the pan onto a large roasting pan.
  • Fill in boiling water into the roasting pan so that it stands halfway along the sides of the cake pan and pop the entire arrangement into the lower rack of the hot oven.
  • Bake for 35-40 minutes or until the cheesecake is baked through and turns golden.
  • Remove from the oven and set aside until the cake is cool enough to handle.
  • Spoon the jam into a saucepan and stir in water.
  • Heat the mixture gently over slow flame until the jam melts and the mixture thickens slightly.
  • Drizzle this hot glaze all over the surface of the cake and place it into the oven to bake for 5 minutes or until it is glazed nicely.
  • Take it out of the oven and set aside to cool slightly.
  • Remove from the tin and continue to cool it on a wire rack, until it reaches down to room temperature.
  • Slice and serve.
