How to Cook Poached Fish with Seaweed Butter Sauce

Ingredients needed to make Poached Fish with Seaweed Butter Sauce:
- 2 megrim sole or any other white fish, skinned, head and tail chopped off
- 1 shallot, finely chopped
- 3 sheets nori seaweed, finely chopped
- 1 ½ pint fish stock
- ½ oz dashi powder
- ½ bay leaf
- Salt and freshly ground black pepper to taste
- 2 whole peppercorns
- 4 tbsp double cream
- 1 fl oz white wine vinegar
- 2 fl oz white wine
- 11 oz unsalted butter, divided
Cooking instructions for Poached Fish with Seaweed Butter Sauce:
- To poach the fish, get rid of any blood lines and skirts from the fishes and slice each fish longitudianally into halves.
- Pour the fish stock into a large pan and stir in the dashi powder.
- Cook the mixture over moderately high heat until it starts boiling and bring it down to a simmer.
- Meanwhile, rub a dash of seasonings all over the fishes and lower them into the simmering stock.
- Poach them for about 4-6 minutes and drain them out into a plate; set a tbsp of the poaching liquid aside and discard the rest of it.
- To make the sauce, melt half of the measured butter in a pan over moderate heat until it foams and throw in the shallots as well as peppercorns.
- Drop in the bay leaf and sauté for a couple of minutes, stirring often, until the shallots begins to soften.
- Add a splash of vinegar as well as white wine and pour the reserved poaching liquid into it.
- Give it a nice stir to mix well and bring it to a simmer.
- Continue to do so until the sauce reduces to ¾ of its original volume and whisk in the double cream until well combined.
- Beat in rest of the butter until it melts and dissolves into the sauce.
- Simmer briefly until it thickens considerably and sprinkle a dash of seasonings to taste.
- Remove from heat and stir in the nori seaweed until they are distributed evenly throughout the sauce.
- Arrange one poached fish in each serving plate and smother them with the butter sauce.
- Serve warm alongside fresh salad.
