Aloo Paratha is a traditional potato stuffed Indian flatbread typically served as a breakfast recipe.

Ingredients

  • For the filling:
  • 5 potatoes, boiled
  • 2-3 green chillies, finely chopped
  • ½ tsp dry mango powder
  • ¼ tsp ground turmeric
  • ½ tsp garam masala
  • ½ tsp cumin seeds
  • Fistful of fresh cilantro, finely chopped
  • 1 tbsp vegetable oil
  • Salt to taste
  • For the dough:
  • 2 ¼ cup wheat flour
  • 2 tbsp plain yogurt
  • 1 tbsp + 3 tsp ghee or clarified butter
  • Water, as required
  • Salt to taste

Instructions

  • For the filling, heat a lashing of oil in a small skillet and throw in the cumin seeds.
  • Stir fry until it begins to splutter and set aside.
  • Peel the skin off the boiled potatoes and place them in a bowl.
  • Mash them with a fork or potato masher into a fine pulp and add the fried cumin into it, followed by rest of the filling ingredients.
  • Stir them all together until well combined; make a point to keep the filling try to prevent the parathas from becoming soggy.
  • For the dough, sieve a couple of cups wheat flour into a large mixing bowl and stir in a pinch of salt.
  • Drizzle a tbsp of ghee over it, along with a splash of water and work them together with your fingers while adding little water from time to time, until the ingredients gather together to form a moderately soft dough.
  • Knock the dough down for about 5-6 minutes and wrap it up in a damp kitchen towel.
  • Let it rest for an hour and then unwrap it to knead further for another couple of minutes.
  • Split the dough into equal parts and roll each part into a small ball.
  • Dust a flat working surface with rest of the flour and flatten out each ball on it, using a floured rolling pin to form a small disc.
  • Place a heaping tsp of the filling into the middle of the dough disc and wrap it around the filling.
  • Pinch the open ends together to seal and press it gently with you palm.
  • Dust some flour on either sides of it and roll it out gently on the floured surface to form a flat, round paratha, making a point that the filling doesn’t come out during this process.
  • Grease a griddle with a lashing of ghee and place one paratha on top.
  • Fry it until one of its side turn golden brown; flip it over and fry the other side in a similar manner.
  • Transfer it to a plate and drizzle ghee on top; make rest of the parathas similarly.
  • Serve hot alongside seasoned plain yogurt or simply lentil curry.
