How to Cook Tofu Dessert In Ginger Syrup

Ingredients needed to make Tofu Dessert In Ginger Syrup:
- 1 lb fresh silken tofu
- 2 clementines
- 10 oz fresh ginger
- 2/3 cup granulated sugar
- 1 cups freshly squeezed out orange juice, free of pulp
Cooking instructions for Tofu Dessert In Ginger Syrup:
- Scrap the ginger root clean and chop a couple of oz of it into thick slices.
- Grate rest of the ginger and set both of them aside in separate bowls.
- Peel off the skin from the clementines and drop it into a pan of boiling water.
- Blanch for a minute and drain them into an ice bath right away.
- Repeat this process two more times to get rid of its bitterness and drain into a plate.
- Blot it dry with a paper towel and slice it into fine juliennes.
- Toss them into a saucepan and stir in the both the grated and sliced ginger, along with the granulated sugar and a splash of orange juice.
- Cook the mixture until it begins to boil and reduce to a simmer over low heat.
- Place a lid on top and continue to cook for about 5 minutes, stirring often , until the flavour of the ginger turns bolder.
- Turn off the heat and let it stand for about 15 minutes to allow the `ginger infuse its flavours into the syrup.
- Pass the syrup through a fine mesh sieve to get rid of the ginger solids and reserve some of its candied slices for decorations.
- Pour a couple of tbsp amber-coloured ginger syrup into each serving bowl and place 3 tbsp tofu into it.
- Drizzle more syrup on top and sprinkle some of the ginger slice candies over it.
- Smother them with more ginger syrup and serve warm, though they taste equally well if serve chilled.
