How to Cook Sweet Corn Fritters With Tomato Salsa

Ingredients needed to make Sweet Corn Fritters With Tomato Salsa:
For the fritters:
- 100 gm self-raising flour
- 1 can (326 gm) sweetcorn, drained
- 1 red chilli, seeded and finely chopped
- 3 spring onions, trimmed and sliced diagonally
- Handful of fresh cilantro, coarsely chopped
- 3 tbsp milk
- 1 egg
- 2 tbsp rapeseed oil
- Salt and freshly ground black pepper to taste
For the salsa:
- 3 tomatoes, peeled, seeded and chopped
- 1 green chili, finely chopped
- ¼ small red onion, finely chopped
- Leaves of 6 cilantro sprigs, chopped
- Juice of a lime
- Large pinch of sugar
- Salt and freshly ground black pepper to taste
Cooking instructions for Sweet Corn Fritters With Tomato Salsa:
- Place the flour in a large bowl and crack the egg into it.
- Whisk them together, while pouring the milk in a steady stream, until they blend properly into a thick, sticky batter.
- Empty the can of sweet corn into it and fold it into the batter, along with the spring onions, cilantro and chili.
- Stir in a dash of seasonings and continue to stir until they are well coated with the batter.
- Drizzle rapeseed oil in a skillet and wait until it turns hot over moderate heat.
- Spoon it few tablespoon of the mixture onto the hot skillet and shallow fry it, in batches, until the bottom is cooked slightly.
- Spread it out slightly and continue to fry until it turns golden brown in colour.
- Flip it over and continue to cook for a couple of minutes, while pressing it down with the wooden spoon, until the other side browns too.
- Transfer them to a plate, lined with kitchen paper, to absorb any excess oil and keep warm until rest of the fritters are made in a similar fashion.
- For the salsa, toss the tomatoes, cilantro, onion and chili together and drizzle some freshly squeezed out lime juice over them.
- Sprinkle a pinch each of sugar as well as the seasonings and continue to toss until they are well combined.
- Arrange the fritters on serving plates and spoon the tomato salsa on top of each.
- Serve warm.
