How to Bake Gougeres with Yogurt Dip

Ingredients needed to make gougeres with Yogurt Dip:

For the gougeres:

  • 3 oz (3/4 cup) Parmesan cheese, grated
  • 2 large eggs
  • 3 tbsp unsalted or salted butter, diced
  • ½ cup flour
  • Large pinch of chili powder
  • Lots of freshly ground black pepper
  • ¼ tsp salt
  • 12 chives, finely minced
  • 1 tsp fresh thyme, minced
  • ½ cup water

For the dip:

  • 2 cups Greek yogurt
  • ½ tsp kosher salt
  • 1 garlic clove, chopped
  • ¼ cup dill, chopped
  • ¼ cup walnuts, chopped

Cooking instructions for gougeres with yogurt dip:

  • Warm up your oven to 425 degrees F and spread a sheet of parchment paper across a baking sheet.
  • Melt butter in a saucepan, and pour in water, along with salt, pepper and chili powder.
  • Add all the flour at once to the above mixture and stir relentlessly to turn it into a smooth blend.
  • Continue to do so until it leaves the sides of the pan to form a smooth ball.
  • Turn off the heat and set aside for a couple of minutes.
  • Crack the eggs into it, one after another, while whisking the mixture briskly with an electric mixer, so that the former don’t cook; the batter might have crumble-like texture initially but will gradually smoothen out into a uniform mixture, free of lumps.
  • Sprinkle ¾ cup of cheese, along with chives as well as thyme and stir well until they are uniformly incorporated into the mixture.
  • Transfer the mixture into a pastry bag, fitted with a wide tip and pipe it into small balls of the size of a cherry tomato, onto the lined baking sheet.
  • Sprinkle rest of the cheese over them and place the baking sheet into the oven.
  • Bake at the preheated temperature for about 10 minutes, before lowering the temperature to 375 degrees and bake it further for another half an hour or until they turn golden brown.
  • In case, you love the puffs extra crispy, poke each of them with a sharp knife, 5 minutes before the baking time is over and return them to the oven.
  • Meanwhile, to make the dip, beat the yogurt until it smoothens and stir in the garlic as well as a dash of salt.
  • Add most of the dill and walnuts to the dip, reserving some as topping, and whisk them well together to mix.
  • Transfer the mixture to small serving bowl and top it up with rest of walnuts and dill.
  • Serve the gougeres warm along side this yogurt dip.
