How to Make Potato Dumplings

Ingredients needed to make Potato Dumplings:

  • 1 lb potatoes, cooked and cold
  • 12 whole apricots
  • 3 tbsp brandy
  •  3 ¾ cups all purpose flour
  • 1 egg yolk
  • 12 lumps of sugar
  • ¼ cup fine sugar
  • 3/8 cup butter, cubed
  • 1 ¼ cups white bread crumbs
  • Dash of ground cinnamon
  • Pinch of salt

For the sauce:

  • ¼ cup brandy
  • ¼ cup apricot juice
  • 10 apricot halves

Cooking instructions for Potato Dumplings:

  • Grate the potatoes while it is still cold and set aside.
  • Place the sugar lumps in a bowl and pour in brandy; set aside to soak.
  • Sift the flour into a bowl and stir in the grated potato as well as a dash of salt into it.
  • Place the egg yolk into it and throw in the butter cubes.
  • Work them together with your hands, while rubbing the butter between your fingers, until they are mixed properly into a dough.
  • Place the dough onto a lightly floured working surface and knead it until soft and elastic.
  • Roll it out into ¼’’ thick circle, using floured rolling pin and slice it into 4’’ squares.
  • Insert a piece of brandied sugar into each apricot half and place another half of it on top to cover.
  • Place one stuffed apricot onto the middle of each dough square.
  • Wrap the edges around the apricot filling and crimp the open ends together to seal.
  • Roll it into a small ball and place it onto a plate.
  • Make rest of the dumplings in a similar fashion and set aside.
  • Bring a large pot of salted water to boil and plop in the dumplings.
  • Boil for 12 minutes and drain them out into a plate, using a slotted spoon, and set aside.
  • Place the breadcrumbs in a clean skillet and stir in the sugar.
  • Spoon in 2 tbsp softened butter and stir fry until they turn crispy.
  • Spread the fried breadcrumbs onto a shallow dish and roll the dumplings on it to coat well.
  • Sprinkle a dash of ground cinnamon over the dredged dumplings and arrange them onto a warmed serving platter; keep warm.
  • To make the sauce, dump all its ingredients into a blender and pulse them into a smooth puree.
  • Pour it into a saucepan and cook over moderate heat until heated through.
  • Drizzle it all over the dumplings and serve warm.
