Cooking time: 30 mins
Ingredients needed to make Steamed Snapper With Fresh Ginger:
- ¾ lb snapper
- 3 tbsp green onion, thinly sliced
- 2 tbsp fresh ginger, shredded
- 2 tbsp dry sherry
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 tsp toasted sesame oil
- ½ tsp salt to taste
Cooking instructions for Steamed Snapper With Fresh Ginger:
- Pour the sherry and soy sauce in a small bowl and drizzle the sesame oil into it.
- Whisk them together until well combined and set aside.
- Place a plate inside a standard steamer and place the fish on it, with its skin side facing down and season with a dash of salt.
- Sprinkle the shreds of ginger on top of the fish and set aside.
- Fill a wok with water until it stands 4’’ from its base and bring it to a simmer.
- Place the steamer over the simmering water and heat it over high flame, until the hot water starts boiling vigorously.
- Once steam begins to flow, place its lid on top of the steamer and steam the fish for about 10 minutes or until it appears flaky when teased with a fork.
- Remove the steamer from heat and let the fish cook further inside the steamer.
- Drizzle a lashing of vegetable oil into a small skillet and heat it over moderately high flame until it sizzles but doesn’t smoke; set aside.
- Lift the fish carefully onto a serving platter and drizzle the soy sauce-sherry mixture over it.
- Top it up with sliced green onions and add a lashing of the hot oil over it, so that it starts sizzling and gives out the pleasant aroma of the ginger.
- Allow the sizzles to subside and serve hot.
