How to Cook Pulled Pork With Brioche Buns

Serves: 8-12 servings

Ingredients needed to make Pulled Pork With Brioche Buns:

For the pulled pork:

  • 3.5 lb pork butt
  • 2 cups BBQ sauce
  • ½ cup apple cider vinegar

For the brioche buns:

  • ½ cup + 3 cups bread flour
  • ½ cup milk, heated to 100 degrees
  • 2 tsp instant yeast
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • 4 eggs
  • 1 egg, slightly beaten
  • 1 ½ cups unsalted butter, softened

Cooking instructions for Pulled Pork With Brioche Buns:

  • To make the brioche buns, stir the yeast into ½ cup of flour and pour the warm milk gradually into the flour while beating it at the same time in a food processor, until well combined.
  • Put a lid on and set aside for 20 minutes to let it rise to double its size.
  • Empty rest of the bread flour into a separate bowl and stir in a dash of salt as well as sugar; set aside.
  • Crack four eggs in a bowl and beat with a standing mixer, equipped with a paddle attachment.
  • Beat in the yeast until they mix thoroughly and fold in the flour mixture while beating at low speed for about 2 minutes, until they are blended into a smooth, uniform mixture.
  • Set the mixer at medium speed and add a large splodge of butter into the dough, adding a couple of tbsp at a time, until they are well incorporated into the dough.
  • Continue to mix the dough for another 6 minutes or until it turns soft, smooth and slightly sticky.
  • Place the dough in a lightly oiled bowl and roll it along its sides to grease it lightly.
  • Cover and set aside in a warm place for a couple of hours or until it rises to become double its previous size.
  • Split the dough into 2 oz portions to make mini buns and roll them into balls.
  • Arrange them on a baking sheet, lined with grease-proof paper and press them gently with your palm to flatten slightly.
  • Wrap them up in a clean kitchen towel and set aside for another hour.
  • Warm up your oven to 400 degrees F.
  • Brush the egg wash all over the buns and bake them for about 10 minutes or until they are baked through and turn golden brown.
  • While the bun bakes, drizzle vinegar in a large slow cooker and place the meat in it, with the fatty side facing down.
  • Fasten the lid and switch on the cooker to medium high.
  • Cook for about 6 hours or until the internal temperature of the pork reaches to 200 degrees F.
  • Remove from the cooker and set aside until cool enough to handle.
  • Pull the pork with your hands or tongs and place them in a large bowl.
  • Empty the cup of BBQ sauce into it and toss well to mix properly.
  • Spoon the pulled pork between the mini buns and serve right away.
