How to Cook Goat Cheese-Stuffed Chicken Breasts

Ingredients needed to make Goat Cheese-Stuffed Chicken Breasts:

  • 4 boneless chicken breast halves, skinned
  • 1 tsp parsley leaves, minced
  • 1 ½ tsp chives, minced
  • ¼ tsp garlic, minced
  • 3 oz goat cheese
  • ¼ tsp fresh thyme leaves, minced
  • 1 cup all purpose flour
  • 1 large egg
  • ¼ tsp fresh lemon juice
  • 2 tsp water
  • 1 tbsp Creole seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tsp unsalted butter
  • ¼ cup vegetable oil

Cooking instructions for Goat Cheese-Stuffed Chicken Breasts:

  • Warm up your oven to 350 degrees F.
  • Spread a chicken breast onto chopping board so that it is lying flat and carve out a deep pocket horizontally, along 1/3 of the thicker side, so that it is a 2 ½ ‘’ long and a couple of inches deep; process rest of the chicken breasts in a similar fashion and set aside.
  • Place the goat cheese as well as butter in a small bowl and add the garlic, minced herbs, chives as well as a splash of lemon juice into it.
  • Mash them together, along with a dash of seasonings until they blend into a smooth mass.
  • Split into 4 equal portions and roll them into cylinders.
  • Place one such cylinder into the pocket of each chicken breast and press the open ends together to secure.
  • Rub a dash of salt and black pepper generously all over the meat and set aside.
  • Place the flour in a bowl and stir in the creole seasoning until mixed well.
  • Crack the egg in a separate bowl and whisk it thoroughly along with water until it breaks down into a pale yellow mixture.
  • Place the chicken breasts onto the seasoned flour, one at a time, and flip them over to dredge evenly on either side.
  • Transfer it into the bowl with beaten egg to coat well.
  • Return it into the plate with seasoned flour and roll until well coated with the blend.
  • Shake off any excess flour and keep aside.
  • Heat oil in an oven-proof skillet over moderately high flame and lower the chicken into it.
  • Cook each side for a couple of minutes until they are seared and brown evenly.
  • Put the skillet into the hot oven and bake for 10 minutes or until the chicken is cooked through.
  • Arrange them on serving plates and sprinkle extra chopped parsley on top.
  • Serve right away.
