Cooking time: 30 mins

Ingredients needed to make Berry Crisp:

  • 2 cups fresh strawberries, rinsed, hulled and quartered
  • 2 cups fresh blueberries
  • 1/3 cup almonds, slivered
  • 3 tbsp cold unsalted butter, diced into 6 cubes
  • ¼ cup all purpose flour
  • 3 tbsp cornstarch
  • ¼ cup granulated sugar
  • ¼ cup dark brown sugar, packed
  • 1/8 tsp fine salt
  • ¼ tsp pure vanilla extract
  • 1 tbsp fresh lemon juice
  • ½ tsp fresh lemon zest, finely grated

Cooking instructions for Berry Crisp:

  • Place a rack in the middle of your oven and warm it up to 375 degrees F.
  • Spread a sheet of parchment paper onto a baking sheet and set aside.
  • Place the strawberries, blueberries and lemon zest in a large bowl and sprinkle the cornstarch plus granulated sugar on top.
  • Add a splash each of vanilla extract as well as lemon juice and toss them all together to coat well; set aside.
  • Place the flour in a separate, large bowl and stir in a dash of salt, brown sugar and almonds until well combined.
  • Crumble the butter cubes into it and work them together, while rubbing the mixture between your fingers from all this time, until they gather together into a large ball; this should take about a couple of minutes.
  • Split the ball into 4 equal portions and shape each of them into 2 ½’’ wide patties; keep aside.
  • Give the berry mixture another stir to mix again and spoon it into 4 temper-glassed Mason jars.
  • Place a dough patty onto top of each jar and press it slightly to fit in.
  • Arrange the jars onto the lined baking sheet, spaced few inches apart and bake for half an hour or until the surface turns crispy golden brown and the berry mixture begins to bubble around the edges.
  • Remove from the oven and set aside for at least half an hour to allow the crisp to cool down to room temperature.
  • Cover and store in the fridge for as long as 4 days.
  • Serve at room temperature.
