How to Cook Mango Bread
Yields: 1 loaf

Ingredients needed to make Mango Bread:
- 1 big ripe mango, peeled, stoned and roughly chopped
- 1 cup all purpose flour
- ¼ cup plain yogurt
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup fine semolina
- Pinch of salt
- ¾ cup granulated sugar
- 2 tbsp walnuts, chopped
- 2 tbsp olive oil
- ½ tsp ground cardamom
Cooking instructions for Mango Bread:
- Toss the mango chunks into a blender and pulse them into a thick pulp; set aside.
- Stir the baking powder as well as soda and salt into the flour and sift the mixture into a medium bowl.
- Stir the semolina into the dry mixture until well combined and set aside.
- Place the yogurt in a separate bowl and pour in the mango pulp.
- Drizzle the oil into it, followed by a sprinkling of sugar plus ground cardamom and whisk them together until the sugar melts and blends thoroughly.
- Tip this mixture into the semolina-flour mixture and stir them together until they blend into a uniform batter, free of lumps.
- Fold in the chopped nuts until they are distributed evenly throughout the batter and set aside.
- Warm up your oven to 190 degrees F and brush few drops of oil within a loaf pan to grease.
- Dust some flour into it and tap out any excess.
- Tip the batter into the prepared pan and bake in the hot oven for 40 minutes or until it turns golden brown in colour and is baked through.
- Remove from the oven and set aside on a wire rack for 15 minutes or until cool enough to handle.
- Remove the bread from the pan and place it back onto the wire rack to cool completely.
- Carve out thick slices and serve.
