How to Make Chocolate Fondants With Chocolate Sauce

Ingredients needed to make Chocolate Fondants With Chocolate Sauce:
For the chocolate fondant:
- 2 ¾ oz dark chocolate, coarsely chopped
- ½ oz cocoa powder
- ½ oz arrowroot
- 1 egg yolk
- 2 eggs
- ½ oz caster sugar
- 1 ½ oz icing sugar, sifted
- 2 ¾ oz butter
For the chocolate sauce:
- 4 ½ oz dark chocolate, coarsely chopped
- 3 ¼ fl oz whole milk
To serve:
- 3 tbsp caramelized almonds, coarsely chopped
- Icing sugar, for dusting
Cooking instructions for Chocolate Fondants With Chocolate Sauce:
- To make the chocolate fondant, grease the sides and base of four 2’’ ring moulds with a knob of softened butter.
- Stir the caster sugar and cocoa powder together in a bowl until they mix properly and sprinkle it into the greased base of the moulds.
- Shake off any excess mixture and arrange them on a baking tray, lined with a wax paper.
- Toss the chocolate chunks into a heatproof bowl, along with the butter and place it onto a pan of hot water, so that its bottom doesn’t come in contact with the water.
- Heat it over moderate heat until it melts.
- Meanwhile, crack the eggs into another bowl, along with the egg yolks and beat them together until they blend together to form a pale, frothy mixture.
- Whisk in the icing sugar until they are mixed thoroughly into the egg mixture and stir in the arrowroot.
- Continue to whisk until the mixture thickens, turns pale and fluffs up to become twice its original volume.
- Fold in the melted chocolate until well combined and spoon it into each prepared mould, leaving ¼ of it empty.
- Leave them in the refrigerator for half an hour or overnight if possible.
- Meanwhile, warm up your oven to 390 degrees F.
- Bake them in the oven for about 5 minutes, until a crust is formed on top of each fondant.
- Set them aside, outside the oven to cool.
- Loosen the sides by running a sharp knife along the edges of each mould and tip them onto plates.
- Leave them in the fridge for another half an hour to chill.
- To make the sauce, pour milk in a saucepan and bring it to a simmer over moderate heat.
- Drop in the chocolate chunks and cook further, stirring constantly, until the chocolate melts and blends into to form a thick sauce.
- Warm up your oven to 355 degrees F and bake the chilled fondants again for about 8 minutes or until they rise up.
- For serving, place a fondant one each serving plate and sprinkle icing sugar on top.
- Spoon the chocolate sauce around each fondant and scatter the caramelized nuts onto it.
- Serve right away.
