How to Cook Fish Goujons With Mushy Peas

Ingredients needed to make Fish Goujons With Mushy Peas:
For the fish goujons:
- 4 lemon sole fillets, skinned and sliced into 1 cm strips
- 1 ¾ oz plain flour
- 2 eggs
- Zest of half a lemon
- 3 ½ oz fresh breadcrumbs
- 4 tbsp olive oil
- ½ tsp cayenne pepper
- Salt and freshly ground black pepper to taste
For the mushy peas:
- 7 ½ oz peas
- 1 tsp fresh mint leaves, chopped
- 1 tbsp crème fraiche
- Salt and freshly ground black pepper to taste
For the lemon mayo:
- 3 tbsp packaged mayo
- Freshly squeezed lemon juice
- Salt and freshly ground black pepper to taste
Cooking instructions for Fish Goujons With Mushy Peas:
- Warm up your oven to 400 degrees F.
- To make the fish goujons, flour onto a plate and set aside.
- Whisk the eggs in a bowl and set it aside too.
- Toss the breadcrumbs, lemon zest and cayenne pepper until they mix together and spread them across another plate.
- Sprinkle a dash of salt and generous amount of black pepper to the fish strips and toss them well to season.
- Dust the seasoned fish with flour and dip the, in batches, into the whisked egg.
- Roll these fish strips onto the breadcrumbs to coat them evenly and set aside.
- Pour oil in a frying pan and heat it over moderate heat until a breadcrumb dropped into it sizzles.
- Dip the coated fish strips into the hot oil and fry them in batches, for about a couple of minutes on every side, until they turn crispy golden brown and are cooked through.
- Drain the fish out with the help of a slotted spoon and place them in a bowl lined with paper towel to soak away excess grease.
- To make the mushy peas, drop the peas into a pan with boiling salted water and steam for about 3-4 minutes, or until they are just cooked.
- Pass through a colander to strain into a bowl and mash them with a potato masher or a fork.
- Whisk in the crème fraiche, followed by chopped mint leaves and season with a dash of salt and freshly ground black pepper.
- To make the lemon mayo, whisk all its ingredients together into a smooth, uniform mixture and spoon it into a small serving bowl.
- Serve the fried fish goujons into serving plates and serve alongside mushy peas and a small bowl of lemon mayo.
