How to Cook Chili Crab

Ingredients needed to make Chili Crab:
- 2 whole Dungeness crabs, 1 lb each
- 1 egg
- 2-3 shallots, minced
- 6 garlic cloves, minced
- 1 cup Chinese parsley leaves
- 1 ½’’ fresh ginger root, finely grated
- ½ cup green onions, thinly sliced
- 4 this red chiles, minced
- ½ cup hot and sweet chili sauce
- ¼ cup tomato paste
- 2 cups low sodium chicken broth
- 7 tbsp peanut oil
- 1 tbsp cornstarch
- Steamed rice, for serving
Cooking instructions for Chili Crab:
- Rinse the crabs well to clean and chop it into smaller chunks.
- Whisk in cornstarch in a couple of tbsp water until well combined; keep it aside.
- Drizzle oil in a large wok and heat it over moderate flame until it sizzles.
- Throw in the shallots, garlic as well as ginger and stir them all together, along with the minced chilies, until well combined.
- Sauté the mixture for a minute, stirring occasionally, until it gives out a spicy fragrance and drop in the crab chunks.
- Pour in the broth and give it a good stir to mix well.
- Increase the heat slightly and continue to cook the mixture until it begins to boil.
- Place a lid on top partially and reduce it to a gentle boil.
- Cook likewise for about 6 minutes or until the crabs turns reddish and are cooked properly.
- Remove the lid and whisk in the chili sauce as well as the tomato paste until they blend properly into th mixture.
- Continue to simmer the chili crab for another minute and stir in a dash of sugar and salt to season.
- Drizzle the cornstarch mixture into it and stir well to mix properly.
- Bring it back to a boil until the sauce turns thick and pour it into a serving bowl.
- Top it up with Chinese parsley leaves ad serve alongside steamed rice.
