How to Cook Liver and Bacon in Gravy

Ingredients needed to make Liver and Bacon in Gravy:

  • 1 lb lambs’ liver, sliced
  • 4 ½ oz streaky bacon rashers (rindless), each chopped into 4 pieces
  • 1 onion, halved longitudinally and sliced
  • 18 fl oz boiled water
  • 4 tbsp all purpose flour
  • 1 oz butter
  • 1 beef stock cube
  • 2 tsp tomato ketchup
  • 2 tbsp sunflower oil
  • Salt and freshly ground black pepper

Cooking instructions for Liver and Bacon in Gravy:

  • Place the liver in a colander and wash them under running cold water.
  • Dab them with paper towels to get rid of excess moisture and set aside.
  • Add a splodge of half of the measured butter in a large skillet and melt it over high flame.
  • Place 3 tbsp flour in a bowl and stir in a dash each of the seasonings until well mixed.
  • Dust half of the liver with this flour and give each of them a nice shake to get rid of excess flour/
  • Place the dredged liver onto the hot skillet and fry one side for a couple of minutes, or until it browns slightly; flip it over to fry the other side similarly.
  • Drain them out onto a plate and keep warm until rest of the livers is fried.
  • Lower the heat slightly and add rest of the butter into it to melt.
  • Throw in the sliced onions and sauté briskly for a minute, stirring often, until the layers separate.
  •  Stir in the bacon and continue to sauté for another 8-10 minutes, stirring at times, until they crisp up and the onions caramelize lightly.
  • Dust rest of the flour over the mixture and give it a nice stir to mix well; cook for a minute.
  • Crumble the stock cube into a bowl with boiled water and stir until it dissolves.
  • Drizzle the mixture into the gravy while beating it in until they blend thoroughly.
  • Continue to cook the gravy over moderate heat until it starts simmering and turns thick.
  • Whisk in the tomato ketchup and sprinkle a dash of seasonings to taste.
  • Dump the fried liver back into the pan and stir it into the gravy to coat well.
  • Cook the mixture for a minute or so to reheat the livers and pour it into a serving bowl.
  • Serve warm alongside fresh salad greens.
