How to Bake Steak And Kidney Pie

Ingredients needed to make Steak And Kidney Pie:
For the base:
- 1 egg
- 1 egg yolk
- 300 gms puff pastry
For the filling:
- 7 oz lamb kidney, diced
- 1lb 9 oz stewing beef, cubed
- 1 ½ pints beef stock
- 2 medium onions, diced
- 1 tsp Worcestershire sauce
- 2 tbsp vegetable oil
- 1 oz plain flour
- Salt and freshly ground black pepper to taste
Cooking instructions for Steak And Kidney Pie:
- Warm up your oven to 425 degrees F.
- Pour the vegetable oil in a large pan and wait until it heats up over moderate flame.
- Add the beef chunks in batches and cook them until they brown nicely, while stirring at times; transfer them to a bowl and set aside until required.
- Throw in the diced kidney into the same pan and sauté them for several minutes until they brown on either sides.
- Stir in the onions and sauté for another 3-4 minutes or until the onions soften.
- Return the browned meat to the pan and dust small amount of flour over the mixture.
- Pour in the stock, give it a good stir or two and continue to heat the mixture until it starts boiling.
- Reduce the heat and continue to simmer the mixture, uncovered, for about 1 ½ hours; in case the filling dries up, feel free to add few splashes of stock to it.
- Turn off the heat and stir in a dash of Worcestershire sauce, along with salt and black pepper to season.
- Keep it aside until it cools down to room temperature and tip it into a pie dish.
- Dust a working surface generously with flour and place the pastry on it.
- Roll it out until it becomes about ¼’’ in thickness and should be a couple of inches larger than the pie dish.
- Roll the flattened pastry in a rolling pin and transfer it carefully onto the pie dish.
- Roll it out again and spread it across the dish; trim off any excess pastry hanging out and press the edges with your fingers to make crimped pattern along it.
- Whisk the egg and egg yolk together until well combined and brush the surface of the pie with this egg wash.
- Bake the pie in the oven for about half an hour or until it puffs up and becomes golden brown in colour.
- Remove from heat and allow it to cool for about 5 minutes.
- Serve alongside steamed vegetables and mashed potatoes.
