Cooking time: 50 mins
Ingredients needed to make Sour Cherry Pie:
- 4 store-brought pie dough rounds
- 10 1/3 cups sour cherries, pitted
- ½ cup unsalted butter, melted
- 5 tbsp + 1 tsp tapioca
- 1 1/3 cups sugar, plus more if necessary
- 1/8 tsp fine salt
- 1 tsp pure almond extract
- 2 tbsp + 2 tsp fresh lemon juice
Cooking instructions for Sour Cherry Pie:
- Empty the cups of cherries into a large bowl and sprinkle the sugar over them.
- Add the butter, tapioca, salt, almond extract and lemon juice into it and toss them all together until well combined.
- Spread one pie dough rounds into a 9’’ pie pan and spread the cherry filling over the pie base.
- Place another pie round on top to cover and pinch the open ends together to seal; trim off the portions overhanging from the edges of the pie pan.
- Make the other pie in a similar fashion, using rest of the cherry filling and pie dough rounds.
- Sprinkle a splash of water over each pie and dust generously with sugar.
- Leave them in the fridge for half an hour while you warm up the oven to 475 degrees F.
- Place them onto baking sheets and bake them in the oven for 5 minutes.
- Lower the temperature of the oven to 375 degrees F and bake further for 45 minutes, or until the filling begins to bubble and the crusts turn golden brown.
- Leave them on a wire rack for a couple of hours to cool completely.
- Slice them into wedges and serve at room temperature.
