How To Bake Mincemeat Pie

Ingredients needed to make Mincemeat Pie:

  • 2 lb lamb shoulder, ground
  • 2 white sandwich bread slices
  • 2 eggs
  • 2 garlic cloves, finely chopped
  • 2 medium yellow onions, finely chopped
  • 3 tbsp golden raisins
  • ¼ cup sliced almonds
  • 1 tsp lemon zest
  • 2 tbsp freshly squeezed out lemon juice
  • 2 oz Asian tamarind paste
  • 2 tbsp curry powder
  • ½ cup milk
  • 2 tbsp unsalted butter
  • 1 tbsp sugar
  • 2 tbsp canola oil
  • Salt and freshly ground black pepper to taste

Cooking instructions for Mincemeat Pie:

  • Crumble the tamarind paste into a small bowl and fill it up with ½ cup of boiling water; set aside for half an hour or until it softens.
  • Whisk the mixture until the paste dissolves and pass it through a fine mesh sieve to strain out a smooth tamarind juice into a small bowl.
  • Split the bread slices into smaller chunks and place them in another bowl, along with ¼ cup of milk.
  • Set aside until the milk seeps into the bread and keep it aside.
  • Drizzle oil in a large skillet and heat it over moderately high heat.
  • Add the minced lamb and brown the meat, while stirring at times, for about 25 minutes or until it dries up.
  • Remove from heat into a bowl and set aside.
  • Place the skillet back to heat and add a splodge of butter into it.
  • Throw in the onions plus garlic once the butter melts and sauté for a couple of minutes, stirring often, until they turn soft.
  • Tip them into the bowl of meat and drizzle the tamarind juice over them.
  • Add the soaked bread into it, along with a splash of lemon juice, zest, raisins, 3 tbsp almonds and crack an egg into it.
  • Sprinkle the seasonings on top and stir them all together until they distribute throughout the mixture.
  • Spoon the mixture into a 9’’ pie plate and spread it evenly across the base.
  • Warm up your oven to 375 degrees F.
  • Crack the other egg into a small bowl, along with rest of the milk and beat them together until well combined.
  • Adjust the seasonings and drizzle it over the meat mixture in the pie plate.
  • Bake the pie for half an hour or until the mixture is heated through and the egg mixture sets and turn golden brown.
  • Take it out of the oven and top it up with rest of the almonds.
  • Set aside for about 10 minutes or until cool enough to handle and serve warm.
