How to Bake Crab-Stuffed Mushrooms

Ingredients needed to make Crab-Stuffed Mushrooms:
- 24 medium white mushrooms, stemmed and wiped clean
- ¼ lb fresh lump crabmeat
- 1 shallot, finely chopped
- ¼ cup fontina cheese, shredded
- 3 tbsp panko breadcrumbs
- 1 tsp fresh lemon juice
- 2 tbsp dry sherry
- ¼ tsp each of sea salt and freshly ground black pepper
- ½ tsp sweet paprika
- 1 tbsp olive oil
- 2 tbsp unsalted butter
Cooking instructions for Crab-Stuffed Mushrooms:
- Position a rack midway within an oven and warm it up to broil.
- Spread few kitchen papers across a large plate and set aside.
- Drizzle olive oil across a baking sheet and heat it up in the oven for a couple of minutes.
- Take it out of the oven and place the mushrooms on top, spaced an inch apart, with their cap side facing up.
- Bake the mushrooms in the oven for about 5 minutes or until the caps turn golden brown and place them on the prepared plate to soak in any excess moisture in them; wipe the baking sheet clean with a towel and keep it aside.
- Spoon the panko breadcrumbs into a medium skillet and toast over moderately high heat for about 5 minutes or until it browns slightly; tip it into a bowl and set aside.
- Wipe the skillet clean with a dry cloth or paper towel and return it to medium heat.
- Add a knob of butter into it to melt until it foams and throw in the shallots.
- Season with a dash of paprika, ground black pepper as well as salt and sauté for about 3 minutes, stirring often, until they shallots soften.
- Add a splash of sherry and continue to simmer the mixture for a couple of minutes or until the smell of the alcohol ebbs away.
- Stir in the toasted breadcrumbs until well mixed and transfer it to another bowl; set aside to cool it to some extent.
- Meanwhile, return the mushrooms to the baking sheet, spaced an inch apart, this time with the cap side facing down and set aside.
- Stir in the cheese and crabmeat mixture into the shallot-wine mixture until well combined and whisk in a splash of fresh lemon juice.
- Spoon the filling within the cavity of the mushroom caps and broil them in the oven for about 3 minutes or until the cheese melts.
- Serve right away.
