How to Bake Crespelle Ai Piselli

Ingredients needed to make Crespelle Ai Piselli:
- 1 ½ cups all purpose flour
- 2 cups milk
- 2 cups freshly shelled peas
- 1 cup Parmesan cheese, finely grated
- 2 ½ cups ricotta cheese
- 4 eggs
- ¼ cup + 4 tbsp unsalted butter
- ½ tsp salt
Cooking instructions for Crespelle Ai Piselli:
- To make crespelles, empty the cups of flour into a large mixing bowl and crack the eggs into it.
- Whisk them together until the yolks break down and blend with the flour to form a uniform mixture.
- Sprinkle a dash of salt and pour in milk gradually, while beating it into the mixture at the same time until all of it is incorporated into the mixture; let it stand for 20 minutes.
- Line a piece of cheesecloth over a strainer and place the ricotta cheese into it.
- Set aside for half an hour to drain and wrap up the ricotta cheese in the cheesecloth to give it a tight squeeze to get rid of any excess moisture.
- Place it in a bowl and stir in the peas until they are evenly distributed throughout the mixture; set aside.
- Chop ¼ cup butter into small dices and set aside.
- Heat a 6’’ skillet over moderately high heat until it turns hot and brush a lashing of oil over it to grease.
- Lower the heat slightly and pour in 2 tbsp of the prepared batter onto the skillet.
- Cook one side for half a minute, until it turns brown slightly and turn it over to cook the other side similarly.
- Slide the crespelle onto a plate and make 17 more crespelles or crepes in a similar fashion until all of the batter is used up.
- Spread 3 tbsp ricotta-pea mixture across each crespelle and fold it into a semi-cicle.
- Warm up your oven to 450 degrees F and grease the interiors of 10’’x8’’ ceramic baking dish with 4 tbsp of butter.
- Arrange the filled crespelles onto the baking dish so that their edges overlap each other.
- Sprinkle the grated cheese on top and scatter the cubed butter over them.
- Bake in the oven for 15 minutes or until the crispelles are heated through and the surface crisps up.
- Take the dish out of the oven and allow it to cool down completely.
- Serve at room temperature and enjoy.
