How to Bake Chocolate Pots De Crème

Ingredients needed to make Chocolate Pots De Crème:

  • 4 oz bittersweet chocolate, chopped
  • 2 large egg yolks
  • 2 cups heavy cream, divided
  • ¼ cup cherry jam
  • ¼ cup + 1 tsp sugar

Cooking instructions for Chocolate Pots De Crème:

  • Warm up your oven to 350 degrees F.
  • Fill a kettle with water and bring it to a boil over moderate heat.
  • Toss the chocolate chunks into a heat-proof bowl and set aside.
  • Pour in 1 ½ cups cream in a medium saucepan and stir in ¼ cup sugar until mixed well.
  • Heat the mixture over slow flame while whisking it constantly, until the sugar dissolves and tip it over the chocolate chunks.
  • Beat them together until the chocolate melts and blends along with the cream to form a smooth, glossy mixture.
  • Place the yolks in a separate bowl and beat it thoroughly, while drizzling in small amount of the warmed chocolate blend until they are mixed thoroughly and the mixture is tempered.
  • Pour this tempered mixture in a steady stream into the chocolate-cream mixture, while beating it at the same time, until all of it is incorporated into the mixture.
  • Arrange four (6 oz) ramekins into a rimmed baking dish and divide the chocolate mixture between them.
  • Pour the boiling water from the kettle, into the baking dish, so that it stands midway along the sides of the ramekins and place it in the oven.
  • Bake for half an hour or until the surface of the custards set and appears wobbly on when agitated slightly.
  • Take the dish out of the oven and arrange them onto a wire rack.
  • Let it stand until they cool down completely transfer them into a fridge.
  • Let it chill overnight or at least for a couple of hours.
  • To serve, place the cherry jam in a bowl and give it a quick whisk to loosen it up/
  • Whip rest of the cream in another bowl along with a tsp of sugar until they form firm peaks.
  • Fold it into the whisked cherry jam until they are just mixed and few swirls of the jam are still visible.
  • Add a dollop of this cherry-cream whip on top of each  chocolate custard and serve chilled.
