How to Cook Pasta Alla Puttanesca

Ingredients needed to make Pasta Alla Puttanesca:
- 1 lb spaghetti, cooked to al dente
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (32 oz) crushed tomatoes
- 1 tin anchovy fillets, drained
- 20 oil-cured black olives, pitted and roughly chopped
- ¼ cup flat-leaf parsley, chopped
- 4 garlic cloves, chopped
- 3 tbsp capers
- Two dashes ground black pepper
- 2 tbsp extra-virgin olive oil
- ½ tsp red pepper flakes, crushed
- Grated Parmesan cheese
Cooking instructions for Pasta Alla Puttanesca:
- Drizzle a lashing of oil in a large skillet and heat it over moderate flame, until it shimmers.
- Throw in the anchovies as well as garlic and sprinkle the crushed pepper over them.
- Stir fry the mixture for about 3 minutes or until the anchovies turn mushy enough to dissolve completely and the garlic softens.
- Throw in the capers, tomatoes, olives as well as parsley and season with few dashes of ground black pepper.
- Stir them all together while breaking the tomatoes with the spatula, and bring the sauce to a boil.
- Reduce it to a simmer and continue to do so for about 8-10 minutes or until it turns thicker.
- Pile the cooked pasta into a large serving bowl and drizzle the sauce over them.
- Toss them all together until well coated and sprinkle the grated cheese on top.
- Serve alongside fresh salad and crusty bread.
