How to Make Pan Con Tomate

Ingredients needed to make Pan Con Tomate:
- One 12’’ baguette, sliced into fourths
- 1 large garlic clove, peeled and halved
- 1 serrano chile pepper
- 1 large ripe tomato
- ¼ cup olive oil
- Sea salt to taste
Cooking instructions for Pan Con Tomate:
- Place a rack about 6’’ below the heating coil in a broiler and warm it up for about 10 minutes to high.
- Chop off the stem of the tomato and grate the pulpy side into a bowl; throw away the residual skin.
- Grate the Serrano pepper similarly and place it into the same bowl with tomatoes.
- Toss them together until well combined and keep it aside.
- Divide each baguette slice crosswise into two equal halves and paint their crusty sides with a lashing of olive oil.
- Place them in the broiler and toast them for a minute or so.
- Take them out of the broiler and rub the garlic halves onto them while they are still warm.
- Spread the tomato mixture over the toasted bread pieces and drizzle rest of the oil over them.
- Season with a dash of salt and serve right away.
