How to Bake Tomato Pie

Ingredients needed to make Tomato Pie:
- One 9’’ homemade pie shell
- 3-4 ripe tomatoes, halved horizontally and juice squeezed out
- ½ cup red onion, chopped
- 8 basil leaves, sliced
- ¾ cup mayonnaise
- 2 cups assorted cheese (gruyere, sharp cheddar and mozzarella), finely grated
- 1 tsp tabasco sauce
- Salt and freshly ground black pepper to taste
Cooking instructions for Tomato Pie:
- Coarsely chop the tomatoes and blot dry by patting with paper towels to get rid of any excess moisture.
- Warm up your oven to 350 degrees.
- Line the frozen, homemade pie shell with a sheet of aluminum foil and bake in the oven for about 20 minutes.
- Peel off the foil and continue to bake for another 10 minutes.
- Remove the baked pie shell from the oven and scatter the onions across its base.
- Top it up with the chopped tomatoes and cover it with a layer of sliced basil leaves.
- Tip the mayonnaise in a medium mixing bowl and fold in the grated cheese, along with a splash of tabasco sauce and dash each of salt plus black pepper.
- Whisk them thoroughly until well combined to form a gooey mixture and spread it across the pie filling.
- Place the pie in the hot oven and bake for about 45 minutes or until it is cooked through and the surface browns and bubbles appear on it.
- Remove from oven and set aside for about 10 minutes to cool slightly.
- Slice and serve warm.
